Hate bleu cheese? Wait!! These ideas and recipes will work with other cheeses too!
When I was growing up I thought bleu cheese was beyond disgusting… So I totally get it…
But my mother loved it…and at some point, I grew up and learned to love things other than peanut butter
Now I think bleu cheese is magic 🎩
Any of these recipes are cheesy peasy easy, and I have paired them with recommendations for bleu cheese substitutes, but I strongly suggest you try them with bleu cheese, it always adds such a tangy tasty element 😋
Apple, Pear and Walnut Galette {substitute cheddar for bleu}
Apricot, Pineapple and Gorgonzola Spread {substitute Manchego or Smoked Gouda for bleu}
Bacon & Brussels Sprout Pizza {substitute Parmesan for bleu}
Bleu Cheese Buns for instant bleu cheeseburgers {substitute any cheese for bleu}
Sometimes if you mix the cheese with the meat it all melts out during cooking. If you melt it on the bun you get all the flavor without going to any trouble at all
This technique is great for BLT sandwiches too!

Bleu Fondue, recipe below, is an elegant way to turn salad into an appetizer. If you must substitute, use a white melting cheese like Fontina and add some Ranch seasoning

Grilled Romaine with Pear, Grapes, Brussels & Bleu {substitute Parmesan for bleu}
Summer Salad with Magic Blueberry Dressing {substitute goat cheese for bleu}
BLEU CHEESE BUNS
Ingredients
- good bakery hamburger buns like sour dough, ciabatta, french bread
- crumbled bleu cheese
- butter
Instructions
- Cut buns in half horizontally. Spread with butter. Sprinkle bleu cheese liberally over top half of buttered buns. Toast until buns are golden and cheese is melted. Immediately place burgers on warm buns.
BLEU FONDUE
Ingredients
- 1 tablespoon unsalted butter
- 1 1/2 teaspoon chopped fresh thyme leaves
- 1 teaspoon minced garlic
- 2 cups heavy cream
- 1/2 pound blue cheese crumbled
- Freshly ground black pepper
- Crisp small whole Romaine leaves celery, cherry tomatoes, cucumber spears, asparagus spears, pea pods
- baguette toasts
Instructions
- In a small saucepan, over medium-low heat, melt the butter and cook until it is just beginning to brown. Immediately add the thyme and garlic. Cook for 2 minutes, stirring to prevent the garlic from browning.
- Add the cream, raise the heat to medium, bring to a slow simmer and reduce the cream by 1/3, about 2 minutes.
- Add the cheese and stir until the cheese melts and the mixture is smooth, season, to taste, with pepper. Pour the sauce into a fondue pot and set over a candle to keep hot.
