Take-out Tuesday, Summer Salad with Magic Blueberry Dressing

Want to know why I call this Magic Blueberry Dressing?
You take some blueberries
top them with some diced apple and crumbled bleu cheese
and bake them in the oven
and it turns into a magical melty mess
Just slide the magic off the foil into a bowl of spinach and crisp romaine
topped with grapes and candied pecans
Oh, did I forget to mention the candied pecans?
You don’t want to forget those!
Now, you are about to be very happy
Give it a toss
and serve it up!
The cheese melts and the blueberries burst and the apples soften and everything just gets so happy!

Summer Salad with Magic Blueberry Dressing
Ingredients
- 1/2 bag baby spinach leaves
- 1 head romaine washed, crisped and torn
- 1 Fuji apple peel on, diced
- 1 cup grapes halved
- 1 pint blueberries washed and patted dry
- 3 oz. good bleu cheese crumbled
- salt and pepper to taste
- caramelized pecans*
Instructions
- Put blueberries on a foil lined baking sheet. Top with chopped apples and bleu cheese.
- Cook at 400 for about 10 minutes. Turn broiler on for last few minutes if necessary to get everything melted.
- Put greens in a salad bowl and top with grapes and pecans.
- Slide hot melted blueberry mixture from pan directly on top of salad. Toss gently. Taste and season if necessary.
Notes
You can add salad dressing if you like but I don’t think you will want to!

Jenna, As far as I’m concerned whenever cheese melts it’s magic 🙂 I’ve had apple with melted blue cheese & pecans but the blueberries add another delicious layer of flavor!
