I know this week is all about giving thanks, being with family and friends, and feasting, but it’s also a big week of football 🏈
Besides turkey and trimmings we will need football food!
I know tomorrow’s Thanksgiving, and I’m not trying to rush Christmas, but we are all about red and white 🐘
Our biggest game of the year, known as the Iron Bowl, is Saturday-
The Alabama Crimson Tide verses the Auburn Tigers, known as the fiercest rivalry in college football
You can use your leftover stuffing to make these tasty stuffing balls to nosh on while you watch the action
The Iron Bowl was so named because originally the game was played in Birmingham, known for it’s production of iron
The game has long moved away to the college campuses in Tuscaloosa, and Auburn, Alabama, but the fans wear their pride as confidently as a shield of iron…
Sorta like these bacon wrapped stuffing balls 🐷
You can make a quick orange glaze by melting brown sugar and orange marmalade in the microwave
Drizzle a little over the bacon
Bake in the oven for 10 minutes
Let them cool for a few minutes before serving
For best results use a piece of bacon long enough to completely encircle the stuffing balls, using the glaze to “glue” the ends together, and placing the balls seam side down on the baking sheet.
You can also secure bacon with a toothpick, just make sure your guests are aware of the stick
Cook the bacon to almost done before wrapping the stuffing balls
I cooked this bacon at 350 on a parchment lined baking sheet for about 20 minutes
Cooking time will be determined by the size of your balls, and the degree of doneness on your bacon before starting
Orange Glazed Bacon Wrapped Stuffing Balls
Ingredients
- partially cooked bacon strips plan on 1/2 to 3/4 strip per ball
- moist leftover stuffing*
- orange marmalade
- brown sugar
Instructions
- Combine equal parts orange marmalade and brown sugar and microwave on high until it just starts to melt, 30-60 seconds. Stir to combine into a glaze. I used about 1/4 cup each to make glaze for 10 balls
- Form stuffing into bite size balls. Wrap balls in a strip of bacon, long enough to enclose balls for best results, and use a dab of glaze to glue ends together. Place balls seam side down on a silpat or parchment paper lined baking sheet. You can also secure bacon with toothpicks if necessary.
- Bake for about 10 minutes to heat through and crisp bacon. Serve warm with plenty of napkins
Notes
Here’s to leftovers!
I wish you a wonderful rest of the week with fine feasting and football!
No matter who wins the Iron Bowl, we all remain friends and respect each other…something we all need to remember…
