Take-out Tuesday, Sugar Cookie Birthday Pie

NG, my son-in-law, is the nicest guy you will ever meet

He also has a major sweet tooth

So for his birthday last week, I made him a giant sugar cookie pie

And topped it with chopped peanut butter cups

I was trying to make up for the fact that for Christmas we gave CC a storage bench and Charlie Brown a play table, but they both had to be put together, and the bench was missing instructions which made it extra fun…

Then a Home Depot gift card for his birthday, which I’m sure will be used for household projects…DD had him painting the hallway the day after Christmas!

This guy deserved a cookie!

This recipe is adapted from Betty Crocker, she said to mix it with a spoon,

I’m sorry Betty, that’s way too much work so I opted for a hand mixer, but next time it will go straight into the food processor or stand mixer

Mix sprinkles into the dough and pat in into a big cookie in a springform pan or a pie plate

I used a springform pan for ease of removal

Let cookie cool completely before icing and garnishing

Equipment

  • round cake pan

Ingredients

Cookie Pie

  • 1 large pouch 1 lb. 5 oz, Betty Crocker Sugar Cookie Mix
  • 1/2 cup butter softened and cut into cubes
  • 1 egg
  • multi-colored sprinkles optional

Icing

  • 1 1/2 cups powdered sugar
  • 3 T butter softened
  • 3-4 T milk
  • 1 T almond emulsion or almond or vanilla extract
  • sprinkles chopped peanut butter cups or candy of choice

Instructions

  • Spray the bottom of a springform pan or glass pie dish with cooking spray.
  • Mix cookie mix, butter and egg in mixer or with a beater until a soft dough forms.
  • Stir in sprinkles if desired.
  • Put dough in baking pan and pat into a level layer.
  • Bake at 325 for about 35 minutes, checking near the end of baking time. Cookie is done when set in the middle and edges begin to brown.
  • Cool completely before icing

Icing

  • Beat sugar, butter, extract, and milk until desired consistency. 
  • If icing is too thin add more sugar, if it's too thick add more milk
  • Spread icing evenly over top of cookie and sprinkle with desired toppings

You can use any kind of cookie dough, sprinkles, or icing flavor and toppings you like

Cut it in very small wedges or pieces because it’s obviously very rich!
