Recipe Box, Pimento Cheese Omelet in a Jar

To celebrate the first cool morning on the coast I made an omelet “to go”

and took my breakfast outside

A bright crisp sunny morning was perfect for a Pimento Cheese Omelet in a Jar

I love a grab and go breakfast, even if I’m only going to the porch

And it’s so much fun to eat something in a jar

Spray the jar with cooking oil spray and break the eggs into the jar

Adding  a dollop {Tablespoon} of cream, milk or water will keep your eggs creamy

Scramble the eggs in the jar with a fork and season with salt and pepper

Add a generous spoonful of homemade Pimento Cheese, or 1 ounce of any grated cheese or torn up slices

Microwave on 50% power for 30 seconds, remove and stir

Repeat, microwaving for 30 seconds at 50% power.  Be patient, cook in short spans and stir

When eggs begin to set around the perimeter, stir stir stir and return to the microwave for 20 seconds at 50% power

You don’t want to overcook this, or you will have rubbery eggs…soft and creamy and piping hot now, just right!

Find a comfy chair somewhere and enjoy~

To keep your mornings hassle free, make up some jars in advance and stash in the fridge.  Add veggies, cooked sausage or bacon or herbs.  You may have to adjust cooking times according to ingredients and your microwave.  Cook in 20-30 second increments at 50% power for best results

  • jar

Ingredients

  • 2 large eggs
  • 1 T pimento cheese or 1 ounce grated or torn up cheese
  • 1 T milk cream or water
  • salt and pepper
  • cooking oil spray

Instructions

  • Spray inside of jar with cooking oil spray. Break eggs into jar.
  • Add liquid, season and stir with a fork to scramble the eggs.
  • Add cheese. Microwave for 30 seconds at 50% power. Stir and repeat.
  • When eggs begin to set around the edges, reduce cooking time to 20 seconds at 50% power.
  • Eggs will continue to cook after removing from oven so remove them when they still look a little wet, stir and enjoy hot creamy cheesy scrambled eggs.

BONUS!  These eggs stay warm much longer than regular scrambled eggs because the heat from the jar keeps them cozy
