Recipe Box, Slow Cooker French Onion Ravioli Soup

Just a quick recipe today as the elves are busy getting ready for the Holiday Home Tour tomorrow

I saw these ravioli at Target the other day and got an idea

A wonderful,  fa la la,  fabulous  idea!

You know, to die for…

it’s so good!

You don’t have to make your soup in a slow cooker, in fact you can buy ready made soup if you like.  Heat the soup and a few  minutes before serving, slide the fresh ravioli into your hot soup and let it cook and heat right there in the soup pot

It’s so good your eyes will cross!

Note: This Giovanni RANA brand fresh ravioli is the best ravioli I have ever purchased.  It is different from any others I’ve tried, it is full of flavorful cheeses, and the pasta melts in your mouth.  Their pesto is heavenly too.  I have seen both the RANA pesto and ravioli at Target and Walmart so hopefully you can find it in your area

Slow Cooker French Onion Ravioli Soup

Ingredients

  • 3 large yellow onions peeled and sliced
  • 4 T butter
  • 2 T flour
  • 3 healthy dashes garlic powder
  • 1/4 tsp dry mustard
  • 2 tsp sugar
  • 4 c DOUBLE strength beef broth*
  • 1 c sherry beer, or white wine
  • 2 dashes Worcestershire
  • dashes allspice white pepper
  • 10 oz Giovanni Rana Cheese Ravioli

Instructions

  • Spray cooker vessel with olive oil spray. Melt butter in slow cooker on high heat. Add onions and stir.
  • Cover and cook on high 1 hour. Stir again and reduce heat to low.
  • Stir again after another hour. Repeat, and cook for an additional hour. You will cook onions 3 hours total before adding liquids.
  • Add flour, garlic, mustard and sugar and stir until onions are well coated and mixed.
  • Add broth, wine, and Worcestershire. Season with allspice. Cover and cook on low for 3-4 more hours.
  • Add ravioli 15-20 minutes before serving, gently pushing them down into the soup. Ladle soup into bowls with 3-4 raviolis.

Notes

*use bouillon cubes or beef bouillon base to make it rather the canned broth which isn’t rich enough
