Here’s a wonderful winter salad to make your mouth, & your body, happy 😊
Kale, spinach, citrus and a creamy orange vinaigrette
The vinaigrette turns creamy with the addition of 1 T sour cream or Greek yogurt
Mix all the other ingredients in a jar first, then add the sour cream or yogurt
Simple magic!
Massage the kale by gently squeezing it with your hands, removing any stems, and give the leaves a rough chop
I used equal parts kale and torn spinach leaves, blood oranges, navel oranges, and grapefruit sections

Citrus Salad with Creamy Orange Vinaigrette
Ingredients
Salad
- 1/2-1 cup spinach leaves per person torn
- 1/2-1 cup chopped kale leaves per person massaged and cut into small pieces
- blood orange, grapefruit or navel orange sections
- Creamy Orange Vinaigrette
- Almond slices toasted
Creamy Orange Vinaigrette
- 1/4 cup fresh orange juice
- 2 Tbsp olive oil
- 1/2 clove garlic, pressed
- 1 tsp sugar
- salt and pepper to taste
- 1 Tbsp plain Greek yogurt or sour cream
Instructions
Salad
- Combine spinach, kale and fruit and toss with dressing to taste
Creamy Orange Vinaigrette
- Put everything except sour cream in a jar and shake well to mix. Add sour cream or yogurt and shake well to combine. Makes about 1/2 cup
