Recipe Box, Spring Thanksgiving

Here’s a fun way to celebrate the arrival of Spring,

Have a Spring Thanksgiving!

Come on in, I’ll show you the menu…

HHjr smoked a turkey breast

and paired it with white BBQ sauce

😋

We used a bottled local sauce,

but it’s super easy to make your own,

see my White Alabama BBQ Sauce here

add horseradish for extra zip!

I made super easy sides,

I used Stove Top cornbread stuffing mix

and added corn, celery and onion

Using a prepared baking dish

Cook the onion and celery in the microwave with the butter

As the butter melts, the vegetables will soften

Add the corn and stir in the dry stuffing

Pour in the chicken broth and stir well

{you can also stir in a beaten egg for a denser stuffing/dressing}

So easy, no fuss, no mess!

The green beans were made in a similar manner

I microwaved frozen beans in a sprayed baking dish until soft

I used Campbell’s Cream of Bacon Soup

instead of the traditional Cream of Mushroom

and added some crispy bacon pieces

It was ready for the oven in no time!

Reserved onions went on top during the last 5 minutes of baking

Instead of pumpkin pie how about

Lazy Lemon Pie in a jar for dessert

Corny Cornbread Dressing

have a taste of Thanksgiving anytime with this fast and easy stuffing!

Ingredients

  • 1 box 6 oz. Stove Top Cornbread Stuffing Mix
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 4 T unsalted butter
  • 1 can 15 oz. corn kernels, drained, or 2 cups frozen corn thawed
  • 2 1/2 cups chicken broth

Instructions

  • Spray or grease a small {1 or 1 1/2 quart} baking dish add onion, celery and butter. Microwave on high for 3-4 minutes, covered with a paper towel, until butter melts and vegetables have softened.
  • Stir in corn.
  • Top with dry stuffing mix and pour chicken broth over all. Stir well to combine. Add a little more broth if dressing seems dry. Stir in egg for a denser dressing. Refrigerate at this point for baking later if desired.
  • Bake covered at 350 degrees for 30 minutes. Uncover and return dish to oven until dressing is heated through. If dressing is cold add a few more minutes to cooking time.

Green Bean & Bacon Casserole

amp up the standard green bean casserole with bacon!

Cook Time 45 minutes

Ingredients

  • 16 oz frozen cut green beans
  • 2-3 slices bacon cooked and cut into small pieces
  • 1 can Campbell's Cream of Bacon Soup
  • 6 oz french fried onions
  • salt & pepper to taste

Instructions

  • Grease or spray a small 1 or 1 1/2 quart baking dish. Add beans and microwave for 3-4 minutes. Drain off any water from beans. Stir in soup, bacon, and 1/2 of onions.
  • Bake casserole at 350, uncovered, for 40-45 minutes, or until hot and bubbling. Top with remaining onions and return to oven for 5 minutes to crisp.
