Recipe Box, OMG This Chocolate Peanut Butter Pie!

We greeted August with a celebration on Thursday,

My children, son in law, and two of my grands were here,

A long time family friend joined us for a special dinner in memory of HH

We made peace with his passing

and look forward to living life to the fullest in his honor…

We are choosing joy as we put the last year behind us

We dined on “fall off the bone” tender ribs with 2 sauces,

Easy Breezy BBQ Sauce, and a Mustard sauce

{I will try to wheedle the recipe out of HHjr to share soon}

Also fresh summer corn on the cob, Not My Mother’s Stuffing Casserole {recipe posting soon},

and Crazy Good Broccoli Salad

{I left the bacon out since we were having ribs and it was still crazy good!}

We topped the evening off with OMG This Chocolate Peanut Butter Pie!

I know, right???

You are going to either love me or hate me for sharing this recipe!

A gazillion recipes are floating around for Chocolate Peanut Butter Pie

I went with the Pioneer Woman’s version and added a twist to it

This pie is dangerously easy to make

Beat cream cheese, sugar and peanut butter together

Fold in Cool Whip*

*note: I haven’t tried this with real whipping cream.  The advantage of Cool Whip is that it holds up in the refrigerator as sometimes real whipped cream can soften and slump…however this pie won’t be around long enough for that to be an issue!!

Place the filling into a prepared pie crust

I used a Ready Oreo pie crust to keep things super easy,

but you can easily make your own crust with cookies, or peanut butter pretzels

the easy crust recipe is included in the printable recipe below

As I was  licking my fingers  making this

I realized this filling would be fantastic served in a sherbet dish

without the crust, like a mousse…

or you could put it in a jar, with or without an Oreo cookie in the bottom

Jar desserts make serving such a breeze…

Lots of possibilities!

Once it chills for a few hours the fun begins

Chop up the peanut butter pretzels and peanut butter chocolate cups

Cover the top of the pie and drizzle with chocolate syrup

I used a squeeze bottle of Hershey’s chocolate syrup, it will drizzle nicely even when it’s been in the refrigerator, so there is no messy melting involved

That’s it!

OMG CHOCOLATE PEANUT BUTTER PIE

Ingredients

  • 1 Oreo pie crust*
  • 1 cup Creamy Peanut Butter
  • 8 oz Softened Cream Cheese
  • 1 1/4 cups Powdered Sugar
  • 8 oz Cool Whip, Thawed
  • 1 cup peanut butter pretzels crushed
  • 1 cup peanut butter cups chopped
  • chocolate syrup

Instructions

  • Beat the peanut butter with the cream cheese until smooth. Add powdered sugar and beat until smooth. Add in the thawed Cool Whip and beat mixture until smooth, scraping the sides as needed.
  • Pour filling into crust, evening out the top with a knife or spatula. Chill for 4 hours. Top with crushed peanut butter pretzel pieces, chopped peanut butter cups and a drizzle of chocolate sauce.

Notes

*or make your own crust with crushed cookies, peanut butter pretzels or a combination of both
Easy Cookie Crust
3 cups crushed Oreos, chocolate wafer cookies, or peanut butter pretzels or combination
4 Tablespoons Butter, Melted
Crush the Oreos, cookies or pretzels until they are fine crumbs. Pour melted butter over the top and stir with a fork to combine. Press into pie pan and bake at 350 degrees for 5 to 7 minutes, or until set. Remove from oven and allow to cool completely.
