Take-out Tuesday, Lightened Up Apps for the New Year

January is a popular time to shed holiday pounds,

get back to a healthier life style,

and start off the New Year with a fresh outlook…

Thursday is New Year’s Eve,

then on New Year’s Day there is a special broadcast

to replace the cancelled Rose Parade,

and then a weekend of football!

You are going to need wonderful things to nibble on,

so here are some “healthier” choices!

Goal Post Green Beans have a light tempura crust,

and yes they are lightly fried,

but you’ll never miss their heavier cousin, the potato

Cheesy Zucchini Frico are made with lots of shredded zucchini and cheese,

for a crisp and tasty lo-carb bite

Mushroom Pizza Poppers give the taste of a pepperoni pizza

without the crust

Skip the french fries and whip up

Parmesan Coated Vegetable Fries with Lemon Aioli

Or these Asparagus Parmesan Aioli Fries

Bacon Wrapped Asparagus is one of the easiest apps I’ve ever made,

but let me warn you, these will disappear fast!

This recipe took me from a broccoli hater to a broccoli lover!

You will be popping this in your mouth like candy!

Broccoli “Candy”

There is nothing my family loves more than artichokes with my lemon aioli…

yes, the sauce is decadent,

but you only need a little on each yummy leaf

Artichokes with Dreamy Lemon Sauce

Vegetable Pot Stickers look fancy but they’re easy to make

and when they’re sprinkled with cashews

and dipped in sweet and sour sauce,

you will have everyone ohhing and ahhing!

Eggrolls don’t have to be fried,

try these Baked Vegetable filled Eggrolls,

and you can also add cooked chicken or shrimp if desired

Or try these baked Southwestern Eggrolls

full of black beans, corn, and fresh spinach

Crazy Good Coconut Chicken is baked not fried,

and can be served as whole tenders or cut into bite size pieces

The sweet coconut sauce gives them a unique flavor twist

Baked shrimp wrapped with a piece of bacon

and topped with sweet chili sauce are a festive treat

Bacon Wrapped Sweet Chili Shrimp

Obviously these aren’t “diet” recipes,

but they are full of vegetables

and lower in calories and carbs than many appetizers

Enjoy these last few days of the holiday season

with some slightly healthier choices

and Cheers to the New Year!
