Take-out Tuesday, Spinach, Sausage & Tomato Tortellini Soup with Panini Toasts

Soup season has officially begun

and I’m sharing a wonderful soup to kick things off!

This irresistible soup can be made on the stove top,

in the instant pot, or in a slow cooker

This beautiful presentation is brought to you by my son, the “Chef”

When he is creating in the kitchen

I love to follow him around with my camera so I can share his recipes

He made cheesy tomato panini toasts for dipping

that are swoonworthy!

He made this soup in our Instant Pot

and started by browning the sausage with the saute function

Once the sausage is browned,

push it to the side and use a paper towel

to soak up excess grease

{be careful not to burn your hand}

Turn the instant pot to slow cook mode

Add tomato soup, chicken broth and diced tomatoes

Cover and set the pot to cook for 6-8 hours

About 30 minutes before you want to eat, add the cream cheese

Stir to get it to start melting

Then stir in the spinach and add the uncooked tortellini*

He used refrigerated tortellini

{if you want to use dry tortellini you will need to boil it first

or try adding it earlier, but I haven’t done that so not sure}

Put the lid back on and cook for 30 more minutes

Put soup in bowls, top with Parmesan

and add Cheesy Tomato Panini Toasts for dipping

Spinach, Sausage & Tomato Tortellini Soup

This soup is super easy to make and can be made on the stove top, in an instant pot or slow cooker. The stove top method can be found in the notes section at the bottom of this recipe

Equipment

  • dutch oven, slow cooker or instant pot

Ingredients

  • 1 lb breakfast sausage or Italian sausage*
  • 1 32-oz container chicken broth
  • 1 28-oz can petite diced tomatoes
  • 2 10.5-oz cans tomato soup
  • 2 8-oz containers chive and onion cream cheese spread, softened
  • 1 20-oz package refrigerated cheese tortellini, uncooked
  • 1/2 bag fresh baby spinach
  • grated Parmesan cheese

Instructions

  • In an instant pot on saute mode, or in a skillet on medium, cook sausage until browned, breaking up into small pieces. Drain excess grease. Transfer cooked sausage to slow cooker or turn instant pot to slow cook mode
  • Add chicken broth, tomatoes and tomato soup to pot. Cover and cook on LOW 6 to 8 hours.
  • Thirty minutes before serving stir in cream cheese and stir. Add spinach and stir then add cheese tortellini. Cover and cook on HIGH for 15 to 30 minutes, until tortellini is cooked.
  • Serve soup in bowls and garnish with Parmesan and Cheesy Tomato Panini for dipping

Notes

If cooking stove top, brown sausage in a dutch oven or large pot. Drain excess grease. Add tomato soup, diced tomatoes, and chicken broth. Stir well. Bring the soup to a boil. Reduce to medium heat and simmer for 20 minutes. Add cream cheese to the soup and whisk to incorporate. Add uncooked cheese tortellini pasta and cook until the pasta is tender.
*Omit sausage if you want a meatless soup

Cheesy Tomato Panini Toasts

Equipment

  • panini press or skillet

Ingredients

  • 4 slices sturdy bread such as rye or sour dough
  • 2 oz. grated cheddar or cheddar slices
  • 8 cherry tomatoes, cut in half
  • butter

Instructions

  • Butter one side of bread slices
  • Put halved tomatoes on unbuttered side of 2 bread slices
  • Top with cheese and cover with remaining bread slices buttered side up
  • Place in panini press or in a skillet and cook until cheese melts and bread is toasted, on both sides. Time will vary according to bread type and method
  • Cut sandwiches into fingers to serve
