Take-out Tuesday, Amped Up Onion Dip

With Summer parties and Backyard Barbeques on the horizon, you might just need this easy little take along dip to bring to your next event~

A little eye candy and this everyday dip will make you a rock star!

Just take your everyday store onion dip, and amp it up with some sauteed sweet onion and applewood smoked bacon

Fry the bacon first so you can cook the onion in some of the drippings for extra flavor

Don’t hurry the onions, low and slow so they can slowly brown and release their sugars and begin to caramelize, about 20 minutes should do

chop them up first if you prefer~I didn’t because I’m an idiot  I forgot~ small dice is best for easier dipping

Combine sauteed onion with dip,  and add crumbled bacon.

I know, right? Not so tough, but trust me, everyone will rave~

Especially if you amp up the presentation

I love this dip with sweet red peppers so I put a dish {actually a spoon rest that matches the plates} of them front and center

Just a simple white basket full of colorful veggies is eye popping and attention getting

Ruffle cut carrot and potato chips jump into sophistication in this starfish dish

This dip is terrific with simple roasted potatoes too

Just roast some halved red potatoes with olive oil and seasoning {I used a garlic bread seasoning}

and serve a dollop with the potatoes along side your steak

Or top potatoes with some dip and serve for an appetizer.  This is even better if you scoop out a little potato before roasting to create a well in the potato to hold the dip…which I didn’t do because technically I’m on vacation….so I’m being a little lazy~but this is a STELLAR appetizer or side dish!

AMPED UP ONION DIP

Amp up prepared onion dip with caramelized onions and bacon
Course Appetizer, condiment
Cuisine American

Prep Time 30 minutes

Ingredients

  • 1 tub prepared onion dip
  • 1/2 sweet onion diced
  • 4 slices thick applewood smoked bacon

Instructions

  • Fry bacon until crisp, drain and reserve drippings.
  • Saute onion in 1-2 Tablespoons of reserved bacon drippings, over medium low heat about 20 minutes, until onions are beginning to caramelize, stirring occasionally.
  • Remove onions from pan and cool.
  • Combine onions and dip. Crumble bacon and gently fold into dip.
  • Serve dip with sweet red pepper scoops, ruffled potato chips, carrot chips or roasted red potato halves. Makes 6 servings, double recipe for a larger group.

ROASTED RED POTATOES

These easy roasted potatoes are great dippers for party dips!
Course Appetizer, Side Dish
Cuisine American

Prep Time 10 minutes
Cook Time 45 minutes

Ingredients

  • petite red potatoes allow 2-3 per person
  • dry garlic bread seasoning or use a combo salt, pepper, garlic powder, parsley, onion powder
  • olive oil

Instructions

  • Wash potatoes and cut in half, scoop out some of the potato if you want to serve them filled with dip.
  • Spray a foil lined baking sheet with cooking oil spray.
  • Put potatoes on foil and drizzle liberally with olive oil and sprinkle with salt and seasonings.  Roll potatoes around on foil to thoroughly coat with oil and seasonings.
  • Roast in a 400 degree oven for 45 minutes or until golden brown and crispy on the edges.
