Secret Recipe Club, Sweet and Savory Stuffed Croissants

It’s Secret Recipe Club time again! This time I was assigned SteakNPotatoesKindaGurl.  You can tell right away that Desiree is a fun loving, down to earth girl with a love for bacon [she signs off her posts with “peace and bacon grease”]    I knew I was in good hands!

After perusing her recipe index, and drooling a lot  trying to choose,  I decided on her Grilled Cheese Croissant Sandwich

Desiree’s Grilled Cheese Croissant is stuffed with bacon, cheddar, apple slices and a mayo honey mustard with dried cranberries.  She butters and cooks the croissant in a skillet, just like a grilled cheese sandwich!

I am not quite that brave so I chose to bake mine in foil instead, to shave a few calories~

I opted to make 2 versions, one like Desiree’s and another one with a different combo

One had Gouda, green apple, bacon, and honey mustard

After baking, the croissant was golden, warm and hard to resist~ the apples soften during baking and are a nice sweet balance to the tangy honey mustard and bacon

For option 2,  fig jam replaced Desiree’s spread of mayo, mustard and cranberries, again to shave a few calories~ I also decided that bleu cheese would work better for me than cheddar, but I didn’t change the bacon!

Pears would be divine in this too

I actually made these one morning, and popped one in the oven when I came home for lunch, then baked the other one for a late supper later in the week.  Not only were they delicious, it was so nice to have a ready made sandwich full of fresh ingredients to pop in the oven

This would be great for breakfast, brunch, lunch or a picnic! You could also assemble a bunch ahead of time and freeze, then just pop one in the oven whenever~

Sweet and Savory Stuffed Croissants

Ingredients

Bacon, Apple & Gouda Croissant

  • 2 T honey mustard
  • 1 1/2 sandwich slices thin Gouda cheese
  • 2 slices bacon cooked
  • 1/4 green apple sliced thin
  • 1 large bakery croissant

Apple, Bacon, Bleu, Fig Croissant

  • 2 slices bacon cooked
  • 1/4 green apple sliced thin
  • 1 large bakery croissant
  • 2 T fig jam
  • 1-2 oz crumbled bleu cheese

Instructions

Bacon, Apple & Gouda Croissant

  • Spread bottom of croissant with honey mustard.  Top with apple slices, then bacon, then cheese.  Replace top and wrap in foil.  Bake at 350 for 15-20 minutes.  Makes 1 sandwich

Apple, Bacon, Bleu, Fig Croissant

  • Spread bottom of croissant with fig jam.  Top with apples, bacon and then cheese.  Replace top, wrap in foil and bake at 350 for 15-20 minutes.  Makes 1 sandwich

Notes

You can assemble these up to 4 days ahead and keep in refrigerator, or assemble and freeze
