Feed your pizza cravings with these lo-carb tasty stuffed “s’rooms”
Easy enough to make for a weekend nosh but elegant enough for a party
Instead of traditional pizza ingredients, this is an Hawaiian style pizza version with ham & pineapple
Look for large cap mushrooms, clean by wiping with a damp paper towel and remove stems
Bake for 5-7 minutes until mushrooms soften and release water
While mushrooms are cooking, saute ham in a dry skillet until it begins to brown
Clean out any remnants in mushroom caps with tip of spoon and pat dry the inside to remove water
Put shredded cheese into bottom of caps
Load them up with ham & pineapple and top with more cheese
Be sure to scrape up all the lovely browned cheese bits on the pan and use to garnish the pizzarooms along with chopped scallions
Hawaiian Pizzarooms
Ingredients
- 8 large mushroom caps cleaned and stemmed
- 2-3 oz grated Parmesan cheese
- 1/2 cup diced dinner ham
- 1/2 cup pineapple tidbits
- 2 green onions chopped
Instructions
- Bake clean and stemmed mushroom caps at 400 for 5-7 minutes on a greased baking sheet until they soften and release water. Remove any remnants inside cap with tip of spoon and pat inside dry.
- Saute ham in a dry skillet, stirring occasionally, until it starts to brown a little, 3-4 minutes.
- Place a layer of grated cheese in bottom of caps. Add ham and pineapple. Top with more cheese.
- Return to 400 degree oven and bake for 15 minutes or until cheese has melted and mushrooms are heated through and golden. Garnish with green onions and any browned cheese bits left on the baking pan. Serve warm
