Recipe Box, Sarah’s Luscious Lemon Pie

When I read about this pie over at my Traveling Tote friend, Sarah’s blog, I literally ran to the kitchen to see if I had the ingredients to make it

I had eggs, sugar and lemon…yep, that’s all you need!

You also need a pie crust…which I decided to make from a recipe I found that claimed it was so easy and THE best…

Let’s just say mine wasn’t…it tasted OK, but was very crumbly…so if it looks odd in the photos that’s why…

The other requirement is that you must slice the lemons paper thin,

I tried to do it with a knife because I didn’t have the right equipment, so some of the slices ended up thicker than recommended

Even with a crumbly crust and too thick slices, it was still so amazing I had to share it with you immediately!!

Here’s where the magic happens

The lemons macerate, in other words, “sit” in the sugar overnight

The next day, you will discover the sugar has turned into a thick sweet syrup surrounding the slices

Add the beaten eggs to the lemons and pour it into your crust, and bake

That’s it!!

Crazy easy!!

Sarah’s Luscious Lemon Pie

This pie uses whole lemons, rind and all!

Ingredients

  • 2 lemons washed
  • 2 cups sugar
  • 4 eggs
  • 1 unbaked pie crust

Instructions

  • Cut lemons, rind and all into paper thin slices with a mandolin or a food processor.
  • Combine lemon slices and sugar in a shallow bowl; let stand until lemon slices have turned the dry sugar into syrup, 4 hours or overnight. Remove any seeds that float to the surface
  • Preheat oven to 450°F. Stir eggs into lemon mixture thoroughly.
  • Line a 9-inch pie plate with piecrust. Pour lemon mixture into shell.
  • Bake for 15 minutes at 450, before reducing the heat to 350 for an additional 30 minutes.
