Take-out Tuesday, Asian Sesame Cucumber Salad

We have been pretty fortunate getting groceries,

but have learned to be flexible

On a recent trip HHjr came home with 6 smallish cucumbers

They were wrapped in a sealed package so hadn’t been handled

An Asian style simple dressing is made with ingredients I always keep in my pantry,

Sesame Oil, Rice Vinegar, Soy Sauce and Sesame Seeds

This only takes minutes to prepare

Slice cucumbers, I chose to cut these in 1/4 inch slices,

but you can slice them super thin with a mandolin if you prefer

Put sesame seeds into a dry skillet and toast over medium heat for 5 minutes,

watch closely and give the pan an occasional shake to turn the seeds

Combine dressing ingredients and add the toasted sesame seeds

Pour dressing over cucumbers in a small dish

let them marinate in refrigerator for several hours before serving

I went a little heavy on the sesame seeds, so use less if you prefer

or leave them out completely if you’re not a fan!

You can serve these just like shown or over chopped lettuce, spinach or kale

This is a light, healthy and refreshing dish

ASIAN SESAME CUCUMBER SALAD

Ingredients

  • 3 small to medium cucumbers or 1 large English cucumber
  • 2 Tablespoons Rice Wine Vinegar
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Sesame Oil
  • 1 Tablespoon sugar
  • 1-2 Tablespoons sesame seeds

Instructions

  • Toast sesame seeds in a dry skillet over medium heat, watching closely and shaking the pan every minute or so to move the seeds around. The seeds will start to turn golden in about 5 minutes.
  • Slice cucumbers into 1/4 inch slices {or desired thickness} and place in small dish. Mix remaining ingredients together and pour over all. Refrigerate for a few hours to let cucumbers marinate before serving.

Notes

These will stay delicious for up to a week in the fridge
Add red pepper flakes if you want to add some heat

This dish is versatile too, add the cucumbers to a sandwich or Spring Roll Wraps,

an Asian noodle bowl or  Chicken Lettuce wraps
