Party Panache, Sunshine Pineapple Bacon Dip or Spread

We had a festive 4th of July weekend with fireworks and a boat parade

And we snacked on this super easy delicious dip

Pineapple, cream cheese & chives, sour cream, bacon

and 3 cheeses

It’s a flavor explosion in your mouth!

It’s also so simple to assemble on a busy summer day

Combine the drained pineapple with the whipped cream cheese and sour cream

Spread it in the bottom of a baking dish

Add a thick layer of crispy bacon pieces

and cover with cheese*

*I used Asiago sandwich slices, but you can use any flavor of sliced cheese or grated cheese you wish

I topped it with a sprinkle of grated sharp Cheddar and Parmesan

At this point you can make it ahead and refrigerate for baking later

Bake it for 30 minutes at 350 degrees

and be prepared for raves!

I served it with Club crackers and provided a spreader

Serve it with baguette slices, toast points, chips or crudities…

Sweet, tangy, creamy, cheesy delicious!

Sunshine Pineapple Bacon Dip or Spread

Ingredients

  • 20 oz. pineapple tidbits or chop fresh pineapple
  • 8 thick slices Applewood smoked bacon, cooked
  • 7.5 oz. whipped cream cheese with chives, softened substitute regular cream cheese and add green onions if desired
  • 1/3 cup sour cream
  • 6 slices Asigo cheese or 1 cup grated cheese of choice
  • 1 oz. extra sharp cheddar
  • 1 oz. shaved Parmesan

Instructions

  • Drain peneapple well, reserving juice for another use
  • Blend pineapple with cream cheese and sour cream
  • Spread mixture into the bottom a greased shallow baking dish
  • Break bacon into 1 inch pieces and place on top
  • Cover with sliced Asiago
  • Top with grated extra sharp cheddar and Parmesan
  • Dish can be refrigerated at this point for baking later
  • Bake at 350 degrees for 30 minutes
  • Serve warm with crackers, chips, toast or crudities

Notes

Whipped cream cheese is easier to blend, but substitute regular cream cheese, softened if desired and add chopped green onions or chives
Bacon can be cooked in advance and refrigerated
