Take-out Tuesday, Couscous Salad with Spinach, Corn and Tomatoes

HHjr whipped this salad up the other night and it was so good,

I have to share it with you

.

.

This is such a fast and easy side dish,

and it’s full of nutrition too

.

.

If you’re not familiar with couscous,

it is sort of like a combination of rice and pasta,

The grains are smaller than rice and it cooks very quickly

.

Benefits of Couscous

It is rich in selenium, an important antioxidant that helps protect your body, and may lower your risk of certain cancers

Selenium also helps reduce inflammation and boosts immunity by lowering oxidative stress in your body

Couscous is a good source of plant-based protein, which can be included in vegetarian and non-vegetarian diets

Couscous is simple to prepare and takes on the taste of other ingredients, making it an easy addition to meals.

Note: Couscous does contain gluten

To make this salad, begin by grilling or roasting corn

{great use for leftover corn from yesterday’s BBQ too!}

Cut it off the cob

{I like to stand the ears on end on a large clean towel which catches the kernels}

.

Make the couscous in a skillet according to package directions

This only takes about 5 minutes

.

.

Then add the spinach and transfer the couscous into a large bowl

The warm couscous will wilt the spinach

.

.

add tomatoes

you can use cherry or grape tomatoes

or chopped or sliced large ripe tomatoes

.

.

Add corn and toss

.

.

Toss in bleu cheese or feta cheese crumbles for an extra tang

.

.

Season with salt and pepper,

a drizzle of olive oil and roasted pine nuts

.

.

Serve warm or at room temperature

Add grilled chicken and make it a main meal

.

Couscous Salad with Fresh Spinach, Corn & Tomatoes

Fresh and delicious Summer in a salad!

Ingredients

  • 1 box Couscous mix Near East Couscous with Pine Nuts
  • 2 ears corn on the cob, cooked
  • 2 cups grape tomatoes, or sliced tomatoes
  • 4 cups fresh baby spinach leaves
  • 3 oz. feta or blue cheese crumbles
  • olive oil
  • salt & pepper
  • roasted pine nuts for garnish, optional

Instructions

  • Prepare couscous according to package directions.
  • When couscous is done, stir in spinach until it just begins to wilt
  • Cut corn off cobs
  • Transfer mixture to a large bowl and add corn, tomatoes and cheese
  • Season with salt and pepper and light drizzle with olive oil
  • Toss to combine
  • Garnish with pine nuts, and serve warm or at room temperature

Notes

Add grilled or cooked chicken to make it a main meal
