Here’s another dump and go, one dish meal
that is perfect for busy days
and with corn and bright green snow peas
it’s summer in a bowl~
Make, bake and enjoy!
This is also a clean out the refrigerator type dish…
I thought I had much more Alfredo sauce than I did,
hmmm…
so I grabbed a can of creamed corn from the pantry
to use as additional sauce… it was perfect!!
The creamed corn was a great compliment to the corn ravioli
fresh snow peas, sausage ravioli and ham
You could also use cooked chicken, bacon
or skip meat altogether and substitute the sausage ravioli
with cheese ravioli or tortellini
First cook the ravioli al dente {until just done}
I love using fresh pasta because it cooks in under 5 minutes
If using ham, give it a quick saute in a skillet
to render any fat and to give it a little color
Cook the snow peas,
I get the kind that are already cleaned,
you can microwave them right in the bag
and they are done in less than 2 minutes
Drain the ravioli and put in in a casserole dish and top it with Alfredo
Then add the creamed corn, ham and snow peas
Stir to combine
Add a generous topping of cheese,
I used Gruyère and shaved Parmesan
At this stage you can cover it and refrigerate for baking later
Try to remove it from the refrigerator
for 30-60 minutes before baking if possible
Bake it covered for the first 30 minutes,
then remove cover and continue to bake
for 15-25 minutes or until hot and bubbling
Serve it up and enjoy!
Summer Breeze Ravioli Casserole with Corn, Snow Peas and Ham
Ingredients
- 10 oz. Italian Sausage Ravioli*
- 8 oz. corn and burrata ravioli* {Trader Joe's}
- 1 cup diced ham or cooked bacon, or chicken
- 1/2 cup Alfredo sauce
- 1 can 14 oz. creamed corn
- 6 oz. snow peas or 1 1/2-2 cups
- 3 oz. shaved Parmesan cheese
- 2 oz. finely grated Gruyère cheese
Instructions
- Cook pasta al dente and drain
- Sear ham in a skillet to render fat and to give it a little color
- Cook snow peas in package, or wrapped in paper towels, on high in the microwave for 2 minutes, and immediately unwrap so they don't overcook.
- Place ravioli into a 1 1/2 – 2 quart casserole and top with alfredo sauce
- Add snow peas and ham
- Pour creamed corn over all and stir to combine
- Top with cheeses
- Cover and refrigerate at this point for baking later if desired.
- Bake at 350 degrees covered for 30 minutes. Uncover and continue baking for 15-25 more minutes until hot and bubbling.
- Serve and enjoy!
