I have been obsessed with gnocchi lately
and today’s Sunday Supper combines it with healthy spinach,
maple flavored ham, a fall favorite butternut squash,
Alfredo sauce and Gruyère cheese
for a very heavenly casserole
It is a breeze to make by using a few shortcuts~
already cubed butternut squash,
a jarred Alfredo sauce, and shredded Gruyère
Cut the ham steak into cubes {or use leftover holiday ham}
and put it on a parchment paper lined sheet pan with the cubed squash
Toss the squash with a little olive oil and salt & pepper
Put the pan in a 400 degree oven for 25-30 minutes until squash is done
and ham begins to char
While squash and ham are roasting,
cook the gnocchi according to pkg directions,
drain and set aside
Put the spinach leaves in the same pan you used for boiling the gnocchi,
Give it a drizzle of olive oil
and cook over medium heat, stirring,
until it wilts down
Add gnocchi back to the pan and add the Alfredo sauce
and some of the grated Gruyère
Add squash and ham
Toss around to combine
and then transfer the mixture to a prepared casserole dish
Top with a sprinkle of Gruyère
At this point dish can be covered and refrigerated
for baking later in the day if desired
Bake it at 350 degrees for 30-40 minutes
Serve it up and dig in!

Gnocchi Alfredo with Spinach, Ham & Butternut Squash
Ingredients
- 1 pkg 16 oz., gnocchi
- 1 8 oz.ham steak, or leftover dinner ham I used maple flavored ham steak
- 1 pkg 13 oz., butternut squash cubes, about 4 cups
- 1/2 bag baby spinach leaves, about 3 cups or more to taste
- 1 cup Alfredo sauce, or more to taste I used Bertolli d'Italia 4 cheese Alfredo
- 1/2 cup finely grated Gruyère or Parmesan cheese
- olive oil
- salt & pepper
Instructions
- Cut ham steak into cubes and place on one end of a parchment paper lined sheet pan
- Place squash cubes on the other end of pan and toss squash with a drizzle of olive oil and salt and pepper, and spread out into an even layer
- Roast squash and ham at 400 degrees for 25-30 minutes until squash is soft and ham begins to char
- While squash and ham are roasting, cook gnocchi in a medium sauce pan according to pkg. directions, drain and set aside.
- Add spinach to pan with a drizzle of olive oil and cook over medium heat, stirring, until leaves wilt down. Add gnocchi back to pan and season spinach and gnocchi with salt and pepper.
- Add ham and squash to pan with spinach and gnocchi. Add Alfredo sauce* and most of the Gruyère, reserving a little for topping later
- Toss everything together and then transfer to a sprayed or greased casserole dish. Top with reserved Gruyère. Dish can be refrigerated at this point for baking later if desired.
- Bake dish at 350 degrees for 30-40 minutes until heated through
- Makes 3-4 servings
Notes
Serve this with Cheesy Zucchini Biscuits
They can be made ahead and frozen for pulling out when needed
This is a great way to use leftover holiday ham!
