One of my favorite things to make in the summer
is something special with fresh summer tomatoes
I must like to make Tomato Pie,
because when I looked at my recipe archives
I found 8 Tomato Pie recipes!
I also like to make flatbreads and tarts
which are like shallow pies
I rounded them up today to re-share with you
to inspire making a tomato pie, flatbread, or tart
Summer Tomato Slab Pie is actually a flatbread shaped like a pie
Sliced tomatoes are placed on a generous layer of mayonnaise,
green onions, and cheese,
topped with more cheese, and baked into a cheesy golden delight
Ryan’s Italian Tomato Pie is a twist on traditional tomato pie
The crust is filled with a spinach ricotta mixture,
topped with sliced red and yellow tomatoes,
drizzled with balsamic vinegar and topped with Parmesan cheese
Garden Tomato Pizzeria Pie is another Italian version,
it’s Tomato Pie pizza style
The deep dish crust holds layers of sliced tomatoes,
Italian sausage, yellow sweet peppers, onions and cheese
and is topped with pepperoni~

Sunflower Tomato Pie also has a taste of Italy
because it is made with basil pesto,
and Italian seasoned bread crumbs
with Parmesan cheese on top
I named it Sunflower Tomato Pie because the yellow tomatoes
remind me of sunflowers
Cheesy Tomato Basil Flatbread is probably my favorite recipe
in this recipe round up
It’s like the pizza version of Tomato Pie,
the ingredients are baked on a crust instead of in a crust
The crescent roll crust is topped with Mozzarella cheese
and sliced tomatoes that are covered with
a cheesy mayonnaise and basil mixture
and baked until crust is golden
BLT Tomato Pie is like a bacon, lettuce & tomato sandwich
It’s a tomato pie filled with bacon and tomatoes
Topped with lettuce after baking
Pimiento Cheese, Bacon, Lettuce & Tomato Flatbread is similar to BLT Pie
The crust is topped with pimiento cheese and tomatoes,
baked until golden and then topped with lettuce
It’s pretty hard to resist!
Smokey Roasted Tomato & Corn Bake is actually a quiche
It is full of flavor with roasted tomatoes,
bacon, corn and Smoked Gouda cheese
Summer Cherry Tomato Pie is full roasted cherry tomatoes
with a ricotta cheese, Parmesan cheese, and Manchego cheese
Bleu Corn & Tomato Tart is made with puff pastry,
fresh summer corn, sliced tomatoes and bleu cheese dressing
The dressing is spread on the pastry dough and anchors the corn
Tomatoes are layered on top of the corn
then they’re sprinkled with bleu cheese and Parmesan cheese
and garnished with balsamic glaze and basil after baking
Summer Corn, Zucchini & Tomato Pie is filled with layers of corn,
zucchini and tomatoes, Alfredo sauce, pesto
with Manchego and Parmesan cheese

with a cheese topped creamy spinach and yellow squash mixture
with cherry tomatoes on top

topped with Everything Seasoning roasted cherry tomatoes,
extra sharp white cheddar, shaved Parmesan and basil
