Take-out Tuesday, Winter Roasted Grape Salad

Salads are the perfect way to eat lighter after the holidays, but sometimes they just aren’t appealing when the weather is cold and dreary.  I saw a roasted grape salad over at Nibbles by Nic and decided to give it a try

I love to add fruit to salads, see All Seasons Salad here, and warm grapes mixed with crispy lettuce, tasty cheese, and nuts, sounded like a perfect dinner to me

Roast the grapes just like you would any vegetables, on a foil lined baking sheet, drizzled with oil and seasoned with salt and pepper

Roast for about 15 minutes at 400 and that’s it!

Toss them with some crispy romaine, a diced flavorful cheese, and some toasted nuts

I used Asiago cheese and pine nuts

Dress with your favorite vinaigrette, such as this Maple and Mustard Salad Dressing here, and season again to taste

Warm sweet grapes, crispy lettuce, crunchy nuts and tangy cheese

Be sure to use seedless grapes 🙂

Winter Roasted Grape Salad

Ingredients

  • 2 dozen red seedless grapes, washed
  • 1-2 heads romaine lettuce or mixed lettuces, torn into bite size pieces
  • 1/2 cup toasted pine nuts
  • 2 oz Asiago cheese diced
  • olive oil
  • salt and pepper
  • vinaigrette to taste

Instructions

  • Put grapes on a foil lined baking sheet and drizzle with olive oil.
  • Season with salt and pepper and roast at 400 for 12-15 minutes.
  • Toss grapes with romaine, cheese and pine nuts. Drizzle with dressing to taste and toss again.
  • Serve immediately.

Simple, fresh, healthy~ enjoy!
