I spent a relaxing weekend at the beach house, {and yes my toothache was totally caused by stress} and had a lot of fun playing in the kitchen, doing fall projects, swimming, reading, and being totally free of schedules…
One of the meals I enjoyed was a flatbread created with Thanksgiving and Christmas flavors in mind, AND a perfect way to reinvent your leftovers!
Cranberry is a traditional flavor for the fall and winter holidays, so that is the base for this festive flatbread
Naan bread is a great option for the crust, but you can certainly use your favorite pizza crust, flatbread or french bread
Spread the crust with a layer of cranberry sauce, I used whole berry canned cranberry sauce, but homemade would be even better
Vermont sharp white cheddar cheese is a nice contrast to the cranberry sauce and helps balance the sweetness
Next, add a layer of turkey or ham or both…I used leftover spiralized ham that I had in the freezer
Next comes a layer of ripe sweet pear slices and a sprinkle of bleu cheese*
*I sneak bleu cheese into almost anything I can, but you can sub goat cheese, Parmesan cheese or omit it altogether
For the final touch, a sprinkle of walnuts and dried cranberries** and it’s ready for the oven
**the dried cranberries I used added additional sweet, so skip them if you want a more savory result
I cooked this one in a toaster oven on the toast cycle, but you can bake it in a regular oven at 400 for about 10 minutes
All the holiday flavors you crave on a pizza!
