You are going to want to put this on your menu asap!
It’s easy, it’s delicious, it’s a little bit different,
and it’s Summer on a plate!
Pork tenderloin is cut into chunks, marinated for 6 hours, and grilled*
Serve it with a simple sauté of corn and zucchini
and you have a winner of a Summer dinner!
*You can make this in a slow cooker too,
instructions are in the printable recipe at the end of this post
The sauce is a mixture of hoisin sauce {Asian BBQ sauce}
and Sweet Chili Sauce
Remove any fat from the tenderloin that you can
and cut the tenderloin into chunks
Mix the sauces together
Reserve 1/2 cup for basting
and put the rest into a large ziplock bag or dish
Add the pork chunks and mix around to cover them
Place in the refrigerator for 4-8 hours, turning occasionally
Preheat your grill to medium high, about 400 degrees
and place pork on hot grill
Cook for 10-12* minutes then turn over and baste with reserved sauce
Grill for 10* more minutes then remove to a pan
and brush again with sauce
*These times are approximate,
cooking time will depend on your grill,
the size of your pork pieces, and the temperature
so use your own judgement
We enjoyed this pork with a simple vegetable saute
of zucchini, onion, and corn
You can use canned corn, thawed frozen corn
or fresh corn cut from the cob
I used fresh corn and cooked it in the microwave
in the husk for 3 minutes per ear,
then I shucked it and cut the corn off the cob
Dice the onion and cut zucchini into pieces
Saute the onion in butter and olive oil over medium heat
until it begins to turn golden
Add corn and zucchini to skillet and season with salt and pepper
Stir occasionally for several minutes
until zucchini begins to brown
Cover pan, turn burner off and let pan sit on burner for 10 minutes
to finish cooking before serving
It will hold and stay warm for 20-30 minutes
if you aren’t ready to serve yet
We also had some Incredibly Easy Scalloped Potatoes with this~
Enjoy!
