Take-out Tuesday, Summer Peach & Bacon Pizza

I have made pizzas with peaches several times,

Summer Peach Pizza with Sausage, Prosciutto and Balsamic

I wanted to make a different pizza with peaches

and this one ended up being kind of a

“clean out the refrigerator” pizza and it idelicious!

After the “case of the disappearing peaches” the other day

I guarded my peach for this pizza carefully!

I had a can of pizza crust dough in the refrigerator,

and looking around I found bacon, 1 ear of corn,

Cheddar Melt, Mozzarella Melt, Blue Cheese crumbles*

and decided to use mayonnaise** to secure the ingredients to the crust

*leave off the blue cheese if you’re not a fan

**you can also use Alfredo sauce, or Blue Cheese salad dressing

Pre-bake the crust about half way until it just starts to turn golden

[It will continue to cook after you add the toppings]

Spread the crust with a layer of mayonnaise

Top it with grated cheddar

Mozzarella and blue cheese crumbles

Bacon

Corn

Peaches

Return pizza to oven to continue cooking crust and melt the cheeses

I baked mine according to the directions on the pizza crust dough can,

it said to pre-bake crust at 400 degrees F for 6 minutes,

top and return to oven for 6 more minutes

It’s sweet, salty, tangy, cheesy delicious!

Summer Peach & Bacon Pizza

This flavorful pizza is made with 3 kinds of cheese, sweet summer peaches, crispy bacon and corn

Ingredients

  • 1 can refrigerated pizza crust dough
  • 1 large fresh peach, peeled and sliced
  • mayonnaise
  • 6 slices bacon, cooked
  • 1 ear corn, cooked and kernels cut off
  • 1 cup grated cheddar cheese
  • 1 cup grated Mozzarella cheese
  • 1/2 cup blue cheese crumbles

Instructions

  • Unroll crust dough onto a non stick sheet pan or parchment paper lined pan
  • Stretch dough if necessary to form an even rectangle
  • Pre-bake crust according to package directions, until it just begins to turn golden
  • Spread an even layer of mayonnaise on crust and top with grated cheddar, then Mozzarella and blue cheese crumbles
  • Break bacon into 1 inch pieces and place on top of cheese
  • Sprinkle corn evenly over all and then add peaches
  • Return to oven until dough is cooked and cheese has melted
  • Cut into squares to serve

Notes

substitute creamy blue cheese dressing or Alfredo sauce for the mayonnaise if desired
omit blue cheese if desired
