Take-out Tuesday, Autumn Vegetable Salad with Warm Corn & Bacon Vinaigrette

We have been dealing with the remnants of Hurricane Patricia on the Gulf Coast.  The wind is howling, huge waves are breaking…

We had power and groceries,  so I got to play in the kitchen

Warm salads are a nice choice as the weather turns cooler,  not to mention,  WETTER ☔️

I opted for fresh raw greens as the base of my Autumn Vegetable Salad

Spinach, kale, raddichio, romaine….you can take a short cut and use a little help from prepared salad in a bag, so handy for getting a variety of goodies

The “dressing” is actually a combination of the warm ingredients plus a little bacon fat, vinegar and mustard

Saute diced bacon until crisp.  Remove and drain.  Pour off all but 1 T of bacon grease from skillet

Saute the other vegetables in the bacon drippings

Add vinegar and mustard to skillet and stir.  Add more bacon drippings, vinegar and mustard as desired to create the vinaigrette

Toss bacon into vegetables and stir.  Pour over salad greens

The warm vinaigrette of vegetables marries with the crisp salad greens for a delightful and satisfying dish

You can add additional vinaigrette if you like a wetter salad

Mixed Green Salad with Corn & Bacon Dressing

Bacon and corn are sauteed with several other vegetables, bacon drippings, vinegar and mustard a warm dressing to serve over mixed salad greens
Prep Time 20 minutes
Course Main Course, Salad, Side Dish
Cuisine American
Servings 2

Ingredients
  

  • 3 cups mixed greens
  • 3 slices bacon diced
  • 2 green onions diced
  • 1 cup fresh, canned or thawed frozen corn kernels
  • 2 cups cooked Brussels sprouts* [optional]
  • 2-4 T vinegar
  • 1-3 tsp honey mustard
  • salt and pepper

Instructions
 

  • Place salad greens in individual bowls or one large bowl.
  • Cook bacon. Remove from skillet, reserving drippings and drain on paper towels. Add onion, corn and Brussels sprouts to skillet. Heat through. Stir in vinegar and mustard. Season with salt and pepper. Add bacon. Heat and add more bacon grease, vinegar and mustard to taste. Serve on top of prepared salad greens.

Notes

*roast sprouts at 400 for 30 minutes with olive oil, salt and pepper
substitute raw or roasted cauliflower or broccoli for sprouts if desired
You could also use sliced raw Brussels sprouts
Add cooked chicken for a heartier salad

    • Thanks Emily, I think you’ll love the salad, it’s my new favorite! Yes, it was very scary weather, our pier was underwater for a while, but water has receded and the sun’s trying to come out this morning >

    Your salad is my new favorite, too. The mix, the textures, the taste–can’t beat that. The hurricane pictures are scary. Once at Orange Beach, AL, we rode out a tropical storm, and I thought the condo might topple. Nothing like those Gulf winds. Stay safe!

  5. I didn’t realize the our coast got such a storm out of Patricia. It has rained off and on here and there is quite a bit of wind, but nothing damaging. This salad looks really good. Now I am going to look and see if I have everything to do this later! You always inspire me with your efforts.

  7. This weather has really been something, hasn’t it?? LA got pounded Sat-Mon and we’re just starting to dry out. We sat in a deluge Sat. night at LSU – ha! But if my boy is still playing, I’m staying! I’m a bit worried about the beach house, so a friend of mine is going to drive to Gulf Shores this week just to check on things. I always lock up tight and put down storm shutters.

    Another warm salad hit! (I still make your warm stone fruit salad often).

    • Your house is probably fine, but it’s good you have someone to check on it~ we didn’t have any damage, just a lot of debris in the pool and yard. We spent the day cleaning up and the weather is back to normal. I can’t believe you sat in the rain for the game!! I’m so glad you like the salads! >

    My mouth was saying OOhh!! just like the darling little ghosties! What horrific weather. I saw it was going to hit the Gulf and cause havoc, but these are the first pictures I have seen.
    The salad sounds wonderful and a warm salad is a great transition. We are still having beautiful days, but cooler nights so I haven’t transitioned into fall cooking yet and this would be perfect.

    • Ironically I was worried about you and your house in Cabo, we were actually dumbstruck that it was so bad, no one predicted it in our area! Luckily we were there and able to secure things last minute~ Happy Halloween, I know you will be doing fabulous witchy things!!!
