Recipe Box, Cheesy Chive Potato Crowns

These bite size potato “muffins” are similar to my Tater Crabs

But they are baked, not fried

And even easier to make   👍

Thawed frozen hash browns

Cheese, green onions and seasonings

Tossed with a little olive oil

Baked in a mini muffin pan

Do you have any silicone baking pans?

They are dreamy for things like this…

Mine cooked in about 35 minutes, but time will depend on your oven and pan

Check often near the end of cooking time and remove them when the edges start to crisp

Great side or appetizer

I first saw this recipe on Everyday Living {thanks Pam!} and is adapted from Mantitlement

I call mine potato crowns because they look like, well, they look like crowns!  👑

Potato Crowns

Prep Time 10 minutes
Cook Time 35 minutes
Servings 24

Ingredients

  • 2 cups frozen shredded hash browns thawed
  • 3-4 green onions chopped
  • 2 oz Manchego cheese grated or diced into small pieces
  • 1 oz Parmesan cheese shredded
  • dash garlic powder
  • salt & pepper
  • 1 T olive oil

Instructions

  • Toss ingredients together in a mixing bowl. Spoon into well greased mini muffin pans, pressing mixture down with fingers or the back of a spoon. Bake at 350 for 30 minutes and check potatoes. Continue to bake until golden and edges are crispy.
  • Carefully remove from pan and serve warm

Notes

Note: a silicone pan makes for easy removal
