Take-out Tuesday, King Cake Crowns

Happy Fat Tuesday!
For our celebration I made vanilla mini bundt cakes
Don’t they look like little crowns?
I had some help too!
What makes these cakes so festive is the colorful batter
Gel food coloring produces intense colors
It is widely available in grocery, big box and craft stores
I used a box cake mix for the base, and amped it up with an extra egg, butter instead of oil, buttermilk instead of water, and additions of sour cream, almond emulsion, and vanilla pudding
Once you’ve made the batter, divide it into 3 bowls and add the food coloring
I used a mini bundt pan mold, and put about 2 heaping Tablespoons of each color batter side by side in the mold

King Cake Crowns
Equipment
- cupcake pan or mini bundt cake pan
Ingredients
- 1 box vanilla supreme cake mix
- 1 box 3 oz. vanilla pudding mix
- 1 cup sour cream
- 1 stick butter melted {1/2 cup}
- 1/2 cup buttermilk
- 4 eggs
- 1 T almond emulsion*
- prepared cream cheese icing {I used prepared Pillsbury icing in a pastry bag}
- purple, green & gold sprinkles
Instructions
- Mix batter according to cake mix directions, adding the additional ingredients.
- Divide batter into 3 bowls and color to desired hue with food coloring gels.
- Spray a cupcake or mini bundt pan liberally with cooking spray. Spoon 2 heaping Tablespoons of each colored batter into the molds , placing them next to each other.
- Bake as directed for cupcakes, checking often near the end of baking time. Do not overbake. Let cakes cool for 1 hour then turnout onto a plate or board. When thoroughly cooled, ice and decorate.

Jenna your little helpers are adorable and they did a good job on the crowns. I had not thought about making cupcakes but I will definitely be trying this soon. I repeat, you should write a cook book my friend.

Yes, the cakes do look like little crowns, Jenna, and how pretty and festive they are. I know the kids had fun decorating and eating them. You’re such a fun grandmother!
Well, thank you, but I don’t bake with them weekly as you do! But these 2 are at a cute age, 5/6 old enough to be able to do it without any help, and young enough to still be excited about it!
