Recipe Box, Lemon Sunshine Cake 3 ways

One cake, 3 desserts!
This Lemon Sunshine Cake will brighten any day!
Make a traditional bundt cake or mini “bundtlettes” or cupcakes
Or make parfaits!
And, always the best part,
It is very easy to make!
Combine cake mix, pudding mix, eggs. melted butter, milk and sour cream
Fill a prepared bundt pan, bundtlette pan or cupcake pan with batter
Bake according to directions on cake mix box
Time will depend on size and pan type
Check often near the end of bake time so you don’t overbake
After cooling, I trimmed the excess edges off the bundtlettes,
cut them in 1/2 horizontally and
spread a generous layer of lemon curd on the bottom half
I used prepared cream cheese icing to top them
Garnish the tops with lemon zest and white chocolate curls
You can also cut the cake into cubes
Make a parfait with layers of cake, lemon curd, white chocolate chips
I made these parfaits in green stemmed goblets,
but this would make a great dessert in a jar recipe too
Top with Cool Whip
You can use real whipped cream,
but I find that Cool Whip holds up better for desserts that aren’t served right away
It’s nice to have a serving of dessert ready to enjoy straight from the fridge
Or make a traditional bundt cake
These would be lovely Easter desserts too 🐇🌷

LEMON SUNSHINE CAKE 3 WAYS
Equipment
- Bundt pan
- mini bundt pan
- parfait glasses
Ingredients
- 1 box Lemon cake mix
- 1 box lemon pudding mix
- 1 cup sour cream
- 1/2 cup milk
- 8 Tbsp unsalted butter, melted
- 4 large eggs
- 1 lemon for zest
- lemon curd
- cream cheese or buttercream icing*
- white chocolate chips or curls
- Cool Whip thawed, for parfaits
Instructions
- Combine cake mix with pudding mix, sour cream, milk, butter and eggs and mix according to cake directions on box. Prepare your pan by spraying with baking spray. Fill pan with batter, filling cupcake pans only 2/3 full.
- Bake according to package directions for the size and type of pan you are using. Let cake cool and then remove from pan. Let cake/cakes cool further.
Lemon Curd
- Split cake or cakes into layers and spread bottom layer with a generous spread of lemon curd. Replace top
Icing
- Ice top of cake or cakes with white icing and garnish with fresh lemon zest and white chocolate curls or chips
Parfaits
- Cut cake into cubes and layer in a glass or jar with cake, lemon curd, white chocolate chips and top with Cool Whip

Jenna, I love the bright taste of lemon and this looks so delicious and easy. I notice the lemon curd jar said new, I usually make mine, but would love to have a store bought one to keep in my pantry. If only, I had one of those with my coffee right now. Wishing you a lovely first day of spring!
