Take-out Tuesday, Chicken Cordon Bleu Cupcakes

Here’s a fun and tasty appetizer bite that makes a great presentation

and is very easy to make

These savory little “cupcakes” are actually made with a biscuit bottom

They are filled with chive cream cheese,

topped with a chicken nugget wrapped in ham

and covered with Swiss cheese

Yes, please!

Swiss cheese, deli ham, regular size canned biscuits,

whipped chive cream cheese, and chicken nuggets

Separate the biscuit in half horizontally

Hold the biscuit and gently pull it apart with your fingers

and place each half into a sprayed mini muffin pan,

pushing down the center forming a mini pie shell

Place chive cream cheese into the bottom of the biscuit

Wrap each chicken nugget with a strip of ham

and place them on top of the cream cheese

Place a square of cheese on top

Bake at 375 degrees for 12-17 minutes, until dough is golden

Pop the cupcakes out of the pan, and serve immediately

with Honey Mustard dressing for dipping

Variations:

You can use leftover cooked chicken pieces,

rotisserie chicken pieces, grilled chicken nuggets

You can substitute mayonnaise, honey mustard,

or a little Alfredo sauce for the cream cheese

You can substitute cooked bacon for ham

You can use Gruyère, Manchego instead of Swiss

Chicken Cordon Bleu Cupcakes

These savory cocktail cupcakes go together in minutes using canned biscuit dough, chicken nuggets, deli ham, Swiss cheese and cream cheese and bake up into tasty bites. Perfect for appetizers and tailgate parties

Equipment

  • mini muffin pan

Ingredients
  

  • 1 can 5 count, refrigerated biscuit dough*
  • 10 chicken nuggets* I used Chick Fil-A nuggets
  • 3-4 slices deli ham, cut into wide strips*
  • 3 slices Swiss cheese*
  • 1/4 cup whipped chive cream cheese*
  • Honey Mustard dressing I used Ken's Honey Mustard salad dressing

Instructions
 

  • Gently separate each biscuit into 2 halves
  • Place halves in a sprayed mini muffin pan, pushing down the center
  • Fill center with 2 tsps cream cheese
  • Wrap each nugget with a strip of ham and place on top of cream cheese
  • Top each cupcake with a square of Swiss cheese
  • Bake at 375 degrees for 12 minutes, check and continue baking until dough is golden 3-5 more minutes
  • Serve immediately with honey mustard dressing for dipping

Notes

*Variations and substitutions:
cooked chicken, rotisserie chicken, grilled chicken nuggets
cooked bacon for ham
Gruyère or Manchego for Swiss
mayonnaise, honey mustard, or Alfredo for cream cheese
Puff pastry or pie dough for biscuits {cooking time will be longer}
