Much of the USA is dealing

with extremely cold temperatures this week,

it’s even 20 degrees in Birmingham Alabama where I live

🥶

You need a hot bowl of soup to warm you up!

This is a soup recipe full of short cuts to make it easy for you

to get out of the kitchen quickly

It’s a satisfying and hearty potato chowder,

loaded with vegetables

Frozen hash browns and corn, cheddar, mirepoix

{chopped carrots, celery & onion}

Chicken broth, cream cheese,

Cream of Chicken & Mushroom Soup,*

grated cheddar, bacon, tater tots and green onions for garnish

*You can use any cream soup you like, Cream of broccoli, Celery, Mushroom, Onion, Cream of Chicken or Cream of Chicken & Mushroom

Cook bacon strips,** then remove to drain on paper towels

Sauté carrots, onion and celery in 1Tbsp remaining bacon grease

until soft, covering with a lid to speed cooking along

**if you don’t want to use bacon, sauté the vegetables in a dash of olive oil and butter

Put potatoes in a greased or lined large slow cooker

and add broth, vegetables and cream soup

Stir to combine

Set the cooker to low and let the soup cook for 7 hours

After 6 hours, about 1 hour before serving, cube cheese

Stir the cubed cheese into the soup,

cover cooker and let the cheese melt into the soup

Your chowder sounds delicious Jenna, especially for this weather and I love the tater tots as garnish! I miss having a Trader Joe’s close by.
P.S. I sent you an email yesterday about a custom paint order that may have landed in your spam folder. ♥

    This looks so delicious, pinned!

  3. That looks rich and so good with all the cheeses!

  4. Your winter warm chowder is perfect for your 20 degree weather in Birmingham. We got hammered with lake effect snow, but of course it was the best snow we have had for winter activities in a long while. They are comparing it to the blizzard of ’66 that we loved as children.

  5. A warming bowl of soup indeed! Yum.

  6. Now this just looks delicious. And don’t you think tater tots are the most unsophisticated – yet secretly loved food in the world? Mmm. Sonic has my vote as the best, but to put tots in soup? You are a genius.

  7. Pam says:

Jenna, this is soup weather. The chowder looks delicious and perfect on a cold day!

    Stay warm!

This is perfect for the winter weather we are having and I love this recipe. I need to pop over to Publix for a few items to make this. Get your milk and bread for the weekend! 🙂

This is a great motivator to have soup ingredients on hand in case of surprise weather. When I lived in Tennessee, snow was rarely an issue, but ice was treacherous. Don’t want to go to the store with black ice on the roads!

  10. This is perfect to keep my family warm and full this winter!

  11. Judee says:

It does seem to be cold everywhere !
This is a perfect recipe for to get warmed up.

The soup looks good, I have never seen tater tots used a topping, good idea for a change from croutons. A good part of the country is getting unusually cold conditions, except for LA country which is burning to a crisp. At first glance at the news, LA could be mistaken for some of the places in the ME experiencing war related fires, strange that.

  13. Patti @ Pandora's Box says:

It. is cold here, too! I think soup is one of my fav foods, especially in the cold snowy winter – this looks delish

  14. Shannon@Belle Bleu Interiors says:

Jenna, it is cold here too, and we are expecting snow tomorrow. This chowder looks delicious and is perfect for these cold winter days. Thanks for sharing! Stay warm and have a wonderful day!

  15. lghiggins says:

Such an easy dish, but the tater tots added to the top make it look as special as I’m sure it is. Cold in OK too!

  16. Karen says:

It is definitely soup weather here in Florida as well…40 degrees tonight. Your chowder sounds hearty and filling, perfect on a cold evening.

  17. Jill Kuhn says:

I made homemade chicken noodle soup last night for dinner. Soup does hit the spot with these cold temps!

  18. Wow, the 20’s is cold. The soup looks so hearty and comforting. I definitely will try making this soup this week. Who doesn’t love bacon?

  19. Pattie says:

What is not to like about this soup? Honestly, I could eat soup every day. I love it so much. We got 11.5 inches of snow this past week, so this looks really good to me at the moment. I love the idea of using tater tots as a topping. I’m going to remember that the next time.

  20. Kim says:

Yup, I did miss it and I’m glad I caught it because this looks so delicious, especially with all that cheesy goodness! Pinned for sure and to the grocery store tomorrow! Thanks for sharing Jenna!
