Snapper Season!

One of the highlights of the summer

for the fishermen in my family

is Snapper Season

The season is short-lived in the Gulf waters near our beach house,

it’s usually from Memorial Day to the end of July

There are strict rules about the size you can keep

and limited to 2 fish per person

HHjr & Big E [13] invited friends and had much fun

They were very happy with their catch!

Big E is pretty proud of his…

Super Boy, now Super Teen [17] didn’t go,

he was playing golf at TPC Sawgrass in Ponte Vedra Fl

There was plenty of fish for dinner!

HHjr grills the snapper filets until done*

and finishes them with lemon, salt and pepper to taste

and a brown sugar mustard glaze

*done: Grilling time depends on your grill and temperature

Or a vegetable salsa

Both are equally delicious!

Brown Sugar Mustard Glaze for Seafood

Course condiment
Cuisine American

Ingredients
  

  • 1 T brown sugar
  • 1 tsp honey
  • 1 T unsalted butter
  • 2 T Dijon mustard
  • 1 T soy sauce
  • 2 teaspoons fresh ginger paste

Instructions
 

  • Melt butter in a small sauce pan over medium heat. Add brown sugar and honey and stir to melt together. Remove from heat. Add mustard, soy sauce, olive oil and ginger and cool. Use sauce for basting or cooking fresh fish.
  • Grill method:
  • Place fish on a oiled foil lined baking sheet. Season with salt and pepper and pour sauce over fish. Cook fish indirectly over medium heat until it reaches the proper temperature for the type and size of fish used.

Grilled Fish with Vegetable Salsa

Course Main Course
Cuisine American

Ingredients
  

  • Adjust ingredient mounts according to number of servings needed
  • cherry tomatoes
  • onion
  • yellow pepper
  • olive oil
  • butter
  • salt & pepper to taste

Instructions
 

  • chop onions and yellow pepper, halve cherry tomatoes
  • Saute in butter and olive oil over medium high heat until soft
  • Serve on top of grilled fish

    I love red snapper and the way HHjr prepares it sounds delicious. Is there anything better than fresh fish caught from the Gulf and eating it the same day?!

    Jenna, I love living on the Gulf as the fresh fish or shellfish are so much better. The first thing the Captain and I did when returning from our motorhome tour of 20 states was go to our favorite restaurant on the water and order and eat fresh seafood.
