Magic Apple & Bleu Cheese Salad
When the days start to cool off,
this salad with apples is a nod to Fall
You can make this in a big salad bowl or individual bowls
Start with bagged mixed lettuce, or whatever lettuce you prefer
Cut apples into slices and then cut slices into bite size pieces
Put apples into a shallow foil lined pan
and top with bleu cheese chunks or crumbles

Here’s where the magic happens…
Put pan in the oven until the cheese has melted
The bleu cheese makes its own sauce!
Spoon the apples and melted cheese over the salad greens
Garnish with Buttery Almonds {recipe below}
I try to keep a jar of these in my pantry,
they are good on so many things!
This salad is so quick and easy,
you can even buy pre-sliced apples in the produce department
and use packaged honey glazed pecans or walnuts
found in the salad dressing aisle

Magic Apple & Bleu Cheese Salad
Ingredients
- 1/2 apple per person
- 2 oz real bleu cheese per person
- fresh salad greens
- Fuji Apple Salad dressing or light vinaigrettte optional
- buttery almonds
Instructions
- Slice apple, do not peel, and cut slices into bite size pieces
- Place apple on a sheet of foil sprayed with non stick spray and put bleu cheese over all
- Place in a 400 degree F oven for 2-5 minutes until melted
- Spoon the melty mixture over salad greens Drizzle salad greens with just a touch of dressing if desired. Top with Buttery Almond slices and serve immediately.

Buttery Almonds
Ingredients
- 2 cups sliced almonds
- 1 Tbsp butter
- 1 Tbsp olive oil
- brown sugar
- kosher salt
Instructions
- Saute almond slices in a large skillet in butter and Olive oil over medium heat
- Sprinkle the nuts liberally with brown sugar and Kosher salt.
- The brown sugar will melt and caramelize on the nuts. Stir often and watch carefully so the nuts don’t burn. Don't walk away, this literally only takes 3-4 minutes
- When they have begun to brown turn out onto wax paper or foil to cool. Store in a jar in your pantry or freezer. Makes 2 cups.
