Southern Scalloped Pineapple with Pecans
Ingredients
- 1/2 cup sugar
- 3 T flour
- 1 cup grated sharp Cheddar cheese
- 1 20 oz can pineapple tidbits drained reserving 1/4 cup juice
- 16-20 round buttery crackers {I used Keebler Toasted Buttercrisp}
- 4 T butter
- 1 cup pecan halves or pecan pieces {optional}
Instructions
- Spray a small casserole dish with cooking oil spray. Stir sugar and flour together in a medium bowl. Add the cheese and toss to coat. Add the drained pineapple tidbits and combine well. Add 1 to 3 T pineapple juice, until mix is moist but not runny.
- Pour into prepared casserole dish. Top with a generous layer of pecan halves.
- Melt butter and crumble crackers into butter, using enough crackers to absorb the butter, but not be too dry. Sprinkle cracker crumbs over top of casserole. Bake at 350 for 30-45 minutes or until set and heated through
- Make up to 24 hours ahead and store covered in refrigerator.
I hope you enjoy!

This is a little different!
Southern food can be a little crazy, this is crazy good!
One of my favorites, but I haven’t had it with pecans. I will have to try it, pecans are always delicious! Happy Tuesday. Jenna!
Thanks Pam! You can always just garnish with pecans if you have picky eaters 🙂
Jenna, even though I’m from the South, I have never heard of this dish. It looks like one of those things that we would slip in as a side dish but it is closer to a dessert.😂 I want to try this but I need a clarification. The picture shows a cornbread mix, but the recipe calls for flour. Does it matter? I guess either would be a thickener.
Great eye Linda, thank you, the corn meal mix should not have been in the picture. I will fix that asap! The recipe should be made as written with flour and sugar.
Thanks, Jenna, for sharing this recipe. I’m going to make it and bring a little Southern comfort to our table!
Thanks Mary, I hope you enjoy!
Nope, pineapple belongs in cake and tropical drinks. There is something twisted and disturbing about pineapple with cheese.
Jenna I love pineapple casserole and the first place I ate it was at a Southern Dinner Theater…I was hooked. 🎃👻🙏🏻

Some people think it’s ridiculous, well maybe, but I say it’s ridiculously good! Thanks Kari~
I have never had this, Jenna, but someone gave me a different recipe for it, but yours sounds better!! I’d love to try your version. Thank you!
I do hope you try this Kitty, I’d love to hear what you think!
You are so right in including this recipe! My family will not even CONSIDER Thanksgiving dinner without it. . . and I concur. This one is a KEEPER! Shelia
I’ve never seen anything like this. It sounds so good. Thanks for the recipe .I’ll have to give it a try. Love your water color of the pineapple too.
Hi Jenna, I haven’t heard of this dish either. Sometimes trying something different is fabulous.
Jenna, I’ve never had anything like this but I love Southern food so I’m betting this is delicious too. Plus, it’s coming from you. I’m going to pin it and give it a try. Thanks for sharing and love the pineapple picture!
Well I don’t feel so bad now that I know I’m not the only one who hadn’t heard of this classic dish. It sounds perfect when having baked ham.
