Southern Scalloped Pineapple

You probably aren’t thinking about pineapple this time of year,

but this baked pineapple casserole is a tried and true Southern classic

AND

is a wonderful side dish for the holidays!

Pineapple Bake with butter crumb topping

It has shown up regularly on Southern tables for years

It’s perfect for brunches, luncheons, and dinners

A great side dish with ham, BBQ chicken, or Pork

Easy to make with simple pantry ingredients,

plus pineapple and cheese

Mix the flour and sugar together and add cheese

Stir in the pineapple

Put mixture into a casserole dish

Add pecans

Then a cracker crumb topping

Bake at 350 degrees F for 30-45 minutes until set

Serve it up!

Southern Scalloped Pineapple with Pecans

A Southern classic recipe perfect for your holiday side dishes, ans any other time of the year!

Cook Time 35 minutes
Course Brunch, Side Dish

Ingredients
  

  • 1/2 cup sugar
  • 3 T flour
  • 1 cup grated sharp Cheddar cheese
  • 1 20 oz can pineapple tidbits drained reserving 1/4 cup juice
  • 16-20 round buttery crackers {I used Keebler Toasted Buttercrisp}
  • 4 T butter
  • 1 cup pecan halves or pecan pieces {optional}

Instructions
 

  • Spray a small casserole dish with cooking oil spray. Stir sugar and flour together in a medium bowl. Add the cheese and toss to coat. Add the drained pineapple tidbits and combine well. Add 1 to 3 T pineapple juice, until mix is moist but not runny.
  • Pour into prepared casserole dish. Top with a generous layer of pecan halves.
  • Melt butter and crumble crackers into butter, using enough crackers to absorb the butter, but not be too dry. Sprinkle cracker crumbs over top of casserole. Bake at 350 for 30-45 minutes or until set and heated through
  • Make up to 24 hours ahead and store covered in refrigerator.

    One of my favorites, but I haven’t had it with pecans. I will have to try it, pecans are always delicious! Happy Tuesday. Jenna!

    Jenna, even though I’m from the South, I have never heard of this dish. It looks like one of those things that we would slip in as a side dish but it is closer to a dessert.😂 I want to try this but I need a clarification. The picture shows a cornbread mix, but the recipe calls for flour. Does it matter? I guess either would be a thickener.

    Nope, pineapple belongs in cake and tropical drinks. There is something twisted and disturbing about pineapple with cheese.
