Party Panache, Pineapple Cocktails

Don’t you think summer is officially right around the corner?
I like to have summery cocktail to sip while the sun goes down
Bacardi’s Pineapple Fusion Rum had me doing the hula when I saw it, and dreaming of Hawaiian pineapple fields
Seriously, this stuff smells amazing!
Mele Kalikimaka and all that…[think Chevy Chase and “Christmas Vacation”]
I added a splash of pineapple juice and some club soda, and a skewer of fresh mint and pineapple chunks
While I was taste testing my new cocktail, someone nearby was having quite an hors d’oeuvre…sushi if you will…can you see the size of that fish?
I had no idea what kind of bird that is, he is different from the normal pelicans, seagulls and egrets that usually hang out on our pier, so I googled it
He is an osprey. The wild life here on the gulf coast is so beautiful, dolphins swim by daily…4 years ago at this time there was an horrific oil spill off New Orleans which severely impacted our whole area for a very long time…it is incredible to witness the comeback power of nature~
This cocktail would make a great martini too, the rum has so much flavor all it would need is a dash of pineapple juice and some shaking with ice in a cocktail shaker…
maybe a touch of whipped cream around the rim… or you could use Cake Vodka and pineapple juice…
Pineapple Upside Down Cake!!
Aloha!
Skip the rum and just serve pineapple juice and club soda, garnished with mint and pineapple, for a virgin cocktail
I do love summer 😉

PINEAPPLE COCKTAILS
Ingredients
Pineapple Cocktail Punch
- 1 1/2 oz. Pineapple Fusion Rum
- 2 oz. Pineapple juice or more to tast
- 2 oz. club soda or more to taste
- fresh pineapple and mint for garnish
Pineapple Upside Down Cake Martini
- 2 oz. Cake Vodka
- 2 oz. pineapple juice
- ice
- whipped cream
- 2-3 chopped fresh pineapple chunks
Virgin Pineapple Cocktail
- 4 oz. pineapple juice
- 2 oz. club soda
- fresh pineapple and mint for garnish
- ice
Instructions
Pineapple Cocktail Punch
- Pour rum, juice and club soda over ice in a medium tall glass. Garnish with fresh pineapple and mint.
Pineapple Upside Down Cake Martini
- Place pineapple into bottom of martini glass. Pipe whipped cream around the rim of a martini glass. Shake vodka pineapple juice and ice in a martini shaker. Pour into a martini glass.
Virgin Pineapple Cocktail
- Fill a medium tall glass with ice. Pour juice over ice and add club soda. Garnish with pineapple chunks and mint leaves.

I love pineapple and it’s very healthy for you too! The osprey is a great bird and makes giant nests that are easy to spot, usually up high on posts.Great photo!
Hi Jenna, oh boy I am on my way to your house….this is looking way to great….
What a refreshing post today…..literally! I’m heading outside (high today in Beaufort, SC is 82 degrees!!!) to wash off the pollen and get my porch ready for afternoon liquids (hydration is important!) as hopefully spring has sprung. These drinks will go nicely with upcoming plans to replenish buds, blooms, and rocking chair pillows as we relax outside with a little bit of Carolina heaven. Saw an osprey this morning when I walked my loving labrador. Btw/I think the first drink would also make a nice rum cake creation for dessert!

Hurrah for cocktail season, that’s my kind of upside down cake too! The pineapple rum has me in mood for a little Caribbean or Hawaiian vacation…I’ll have to settle for Christmas vacation instead 🙂 Fun capture on your Osprey shot! We look forward to their return each year and love watching them swoop down and scoop up a fish.They occasionally leave some of their catch behind on our dock 🙂
