Secret Recipe Club, Pancakes & Bacon Cupcakes

My Secret Recipe Club assignment this month is It’s Yummy to My Tummy

The funny thing is that Heather was assigned my blog last month! You can see what she made from my recipe index here
I am always looking for grabable [you know easy to grab] breakfast type foods for busy mornings or weekends at the beach when everyone is doing their own thing, so her Pancake and Sausage Muffins just spoke to me!
These tempting little pancake muffins have the syrup right inside!
I used maple bacon instead of sausage, and baked it on a parchment lined baking sheet. So easy, just takes about 20-25 minutes at 350
Mix the Bisquick with eggs and buttermilk or 2 % milk [she uses soy milk]
Fill paper lined, or well greased muffin cups 2/3 of the way
Add bacon and push down to submerge
Bake for about 20 minutes, or until set in center
Remove from pan
Top with a pat of butter and enjoy!

Pancakes and Bacon Cupcakes
Equipment
- cupcake pan
Ingredients
- 2 cups Bisquick baking mix
- 2/3 cup buttermilk
- 2 large eggs
- 1/3 cup real maple syrup
- 8 slices maple bacon cooked*
Instructions
- Preheat oven to 350 degrees. Line muffin tins with cupcake papers or spray well with olive oil spray.
- Mix Bisquick, eggs, buttermilk and syrup in a 1 quart measuring cup. Pour into prepared cups, filling up about 2/3. Break bacon slices into 6 pieces, each cupcake will get 3 pieces. Add 3 bacon pieces to each cupcake batter and press down gently with back of spoon to submerge.
- Bake 18-22 minutes, or until set and just starting to turn golden. Top with a small slice of butter and serve warm. Makes 16
Notes
*I cooked my bacon on a parchment lined baking sheet at 350 for about 20 minutes. Watch carefully towards the end of baking time so it doesnāt burn


This dish combines Belgian waffles, maple sausage, maple syrup, eggs, cheese and pecans into a complete breakfast in a casserole. Perfect for holiday breakfasts or weekend brunch~

I am swooning over both breakfasts foods – but give them to me for dinner time please! I love them, just am not hungry in the morning! Wow, the syrup and bacon and yummy in the middle and that waffle casserole – you are killing me! Hope you had a nice Valentine’s Day!

Yeah! How fun, I’m glad you had a chance to return a review the following month š . Yes, these little pancake muffins are such an easy treat to have on hand and very portable for on the go! This is a reminder to me that I must make them again soon as it is a good staple recipe for my kids, any meal or snack š

thanks Emily, you can keep them in the freezer and pop one out when you need them. They are a little sticky, from the syrup, so keep your eye on sticky fingers š
