You don’t need a rainbow to find this Pot o’ Gold Soup, the rainbow is already in it!

This “pot o’ gold” is simple to put together

Since it’s full of colorful vegetables, that cancels out the cheese and cream ๐Ÿ˜Š

Saute the vegetables and then add the liquids and everything but the cheese

Cook this for a few minutes, then add the cheese

Cover and let the soup simmer on low to melt the cheese, 15-20 minutes

Don’t forget the “Lucky Croutons!”

Pot o' Gold Soup with Lucky Croutons

  • Servings: 4
  • Difficulty: easy

1/2 large sweet onion, chopped

3 stalks celery, chopped

red, yellow and green bell pepper, about 1/2 pepper each color, chopped

2 cloves garlic, minced

2 T butter

1/4 cup AP flour

1 12 oz bottle beer or ale

2 cups chicken or vegetable broth

1/2 cup heavy cream

1 tsp Dijon mustard

1 T Worcestershire sauce

2 cups, 8oz, grated smoked Gouda or Cheddar cheese

Cook onion, celery and peppers in butter for 10 minutes over medium heat, stirring occasionally, until soft.ย  Add garlic and cook one minute.ย  Add flour and cook and stir one minute.ย  Add broth, beer, mustard, Worcestershire and cream.ย  Stir and cook for a few minutes.ย  Add cheese, lower heat and cover.ย  Let soup simmer 10-20 minutes to let cheese melt into the liquid.ย  Taste and season with salt and pepper if desired.ย ย  4 servings

Lucky Croutons

10 brussels sprouts

6-7 strips of maple bacon

Cut off stem ends of brussels sprouts and halve.ย  Wrap each half in 1/3 strip of bacon stretching to fit and place seam side down on a foil lined baking sheet that has been sprayed with cooking spray.ย  You can tuck in some plain sprout halves in between the bacon ones, they will cook perfectly in the rendered bacon fat of the wrapped sprouts.ย  Bake at 400 for 30-40 minutes.ย  Increase oven to 425 for a few minutes at the end if necessary to get the bacon cooked, watching carefully.ย  Skewer sprouts on mini picks to serve with soup. Makes 20 “croutons”

  6. I love that the veggies cancel out the cheese and cream!….Love soups recipes such as this one as it seems quick and easy and delicious!…We love brussels sprouts and bacon…so what a great lucky combination!….Definitely a pot of gold winner!
