Recipe Box, Krazy Kale!

HHjr gets a daily email from epicurious.com with a featured recipe and he forwards the interesting ones to me…
When I saw this kale recipe my reaction was, “We are making this tonight!”
This is one of the craziest recipes I’ve seen, but I went forward with blind faith, and let me just say, it is Crazy good!
Oh and another part of the craziness is how easy it is to prepare
Use a large deep pan, like a lasagna baker and fill it to overflowing with chopped kale. I bought a bag of prechopped kale
Season liberally with salt, pepper and freshly grated nutmeg. Toss the kale with your fingers to distribute the seasonings
Drizzle all over with cream
Top with finely shredded sharp Cheddar cheese
After baking, the top is crispy crusty and then as you dig down it gets softer and creamier
The contrast in textures will make your taste buds so happy!
Make sure you get some of the creaminess from the bottom and some of the crispy crunch from the top with for each serving

Krazy Kale
Ingredients
- 1 large bag of chopped Kale about 16-20 cups
- 1 1/2 cups heavy cream
- 6 oz. finely grated sharp cheddar cheese
- fresh nutmeg
- kosher salt and pepper
Instructions
- Spray a large deep rectangular baking dish with olive oil spray. Pile the kale high in the dish. Season well with salt, pepper and grated nutmeg. Toss the kale with your fingers to distribute seasoning. Drizzle cream slowly over the top of the kale, letting it seep down through the leaves. Sprinkle grated cheddar liberally over the top
- Bake at 350 for 30-40 minutes. Dish should be brown on top and kale soft on the bottom.

It might not win a beauty contest but you’ve got to try this, it’s Krazy Good!!
P.S. All that healthy kale offsets the cheese and cream 😋
