Take-out Tuesday, Sheet Pan Sausage & Marinara Sandwiches

This really is a weeknight easy, very satisfying sandwich that is a meal in itself
Simple ingredients, easy prep
The vegetables and sausage roast together on a sheet pan
Drizzle the vegetables with olive oil, salt and pepper and roast in the oven
While sausage and vegetables are cooking, simmer sauce with seasonings, or use homemade sauce
Cut the bread into 6 inch lengths, and slice in half horizontally, not quite all the way through, leaving one side attached
Spread butter on the inside of rolls and sprinkle with garlic powder and a generous amount of Parmesan cheese
Place in toaster or broil until golden and cheese has melted, and keep warm
Lay 3 links of sausage on each bread bottom
Top with onions and tomatoes
Cover with hot marinara and sprinkle with more cheese
Garnish with fresh basil which I always seem to forget to do if desired
Enjoy!
