Take-out Tuesday, Bacon Wrapped Hot Dogs with Pineapple Salsa

Are hot dogs part of your summer menu plans?

Elevate a simple dog by stuffing it with Pineapple Salsa and wrapping it in bacon

I cooked these in the oven, for a simple supper last week, but you can definitely put them on your grill

These hot dogs only take minutes to prepare, and cooking them on a parchment lined baking sheet makes clean up a breeze

You can precook your bacon a little to ensure it gets crispy

Put dogs on a toasted bun and cover with additional salsa

Such a tasty summer meal!

hot dogs, 1 or 2 per person

bacon strips, 1 per hot dog

chopped pineapple or pineapple tidbits, 1/3 cup per hot dog

sweet onion, sliced, 1/4 onion per hot dog

olive oil

Saute onion in a little olive oil and butter over medium low heat for about 10 minutes, stirring occasionally.  Add pineapple and continue to cook on medium low for a few more minutes.  Slice hot dogs in 1/2 vertically, leaving one side attached.

Open slit in hot dog and stuffed with some of the salsa.  Wrap hot dog with a slice of bacon and secure each end with a toothpick.

Place on a parchment lined baking sheet and bake for 20 minutes.  Continue to bake for 5-10 more minutes or until bacon is cooked.  Time will depend on type of bacon and hot dogs used.

Toast buns.  Place one hot dog in each bun and top with more salsa.
