Party Panache, Pineapple Smoothie Cocktail

I saw this recipe over on Listolic and just had to try it!
She said you can make this with almond milk or coconut milk, but I chose to try the adult version with coconut rum
I used fresh pineapple, but I really think canned pineapple would break down more easily
Puree the pineapple and place in the refrigerator or freezer to chill
Pour puree into a pretty glass and stir in liquid of choice
You will need a fat straw or spoon, depending on how frozen your pineapple is
I added Caribbean Rum with coconut liqueur and some crushed ice
A refreshing way to cool off!

Pineapple Smoothie Cocktail
Equipment
- blender or food processor
Ingredients
- per serving:
- 1 cup pineapple chunks
- 2 oz Caribbean Rum with coconut liqueur
- 1/2 cup crushed ice
Instructions
- Puree pineapple in a blender or with an immersion blender. Chill for at least 1 hour in freezer or refrigerate overnight. Place chilled pineapple in a glass and stir in liqueur and ice. Serve immediately

Oh the pineapple pillow is the perfect accessory for this drink! We just made the Dole Pineapple Whip versions – supposed to be able to pipe them out like a soft serve, but it ended up more like a smoothie. Such summery goodness!
