Creations, Setting the Mood with Flowers and Food

The sun finally came out yesterday
After days and days of gray
My spirits lifted, I felt giddy & gay
The flowers I put in the foyer last week were starting to droop
so I dashed out to Trader Joe’s so I could regroup
Sunflowers and alstromeria and seemed a strange choice
but a colorful pitcher gave the flowers a new voice!
And what is another wonderful way to change the mood?
Beautiful, fresh and colorful food!
How about a skewer full of flavors on this beautiful day
A rainbow of food on a pretty white tray
A pitcher of flowers seems to mimic the food
The colors perhaps are imitating the food!
My MacKenzie-Childs piggy wanted to be part of the day
Pink and polka dots brighten any display
Sun, food and flowers,
they all fill the soul
It’s life’s simple things that really console…
I lightened up these antipasto skewers with lower fat salami and Babybell cheese
I also used very thin honey smoked deli ham, red grapes, 2% cheddar cubes, crisp romaine leaves, orange and red sweet peppers, pickles and fresh spinach leaves
This is a good way to use up little bits of this and that in your refrigerator
It was a wonderful lunch treat!

Antipasto Skewers
Equipment
- skewers
Ingredients
- salami slices
- deli ham slices
- cheese cubes or pieces
- grapes
- fresh spinach leaves
- crisp romaine leaves
- grape tomatoes
- sweet peppers
- pickles
- Other options: fresh mozzarella balls olives, prosciutto, marinated artichoke hearts, pepperoni
Instructions
- Fill skewers with bite sized bites of a variety of these foods. Brush with Italian dressing or serve on the side for dipping if desired
Now I have a new bright, fresh vignette
To get me through another weekend that’s supposed to be cold and wet!

Such a tasty and pretty lunch!
Delicious antipasto skewers for a pretty lunch treat! Flowers and sunshine do feed my soul. We’re in the same weather pattern of rain, rain and more rain…I’d rather have snow! It least is beautiful coming down and gone the next day.

I don’t know why I tend to think in rhymes, it just happens 🙂 Please don’t say the snow word, it’s always a disaster around here when we get the white stuff!
The happy colors of those skewers look like spring! Maybe I need to make those NOW to brighten up our Michigan grays!

I have made similar “kabobs” for parties, standing them upright and stuck in a watermelon rind shell….they were a big hit!! I “sprayed” them with balsamic dressing Yours look delish!
