Take-out Tuesday, Broccoli Carrot Slaw with Creamy Yogurt Dressing

This Broccoli Carrot Slaw has tons of flavor without a lot fat and calories, yet nutrients from the broccoli and carrots, and protein from the yogurt
The dressing is made with non fat Greek yogurt, a touch of light sour cream, vinegar and a dash of maple syrup or honey for sweetness
Make it in the morning so the dressing has a chance marinate and soften the vegetables
It only takes minutes to prepare
Season to taste with salt and pepper
You’ll never miss the mayonnaise
Add dried cranberries, pumpkin seeds, nuts, bleu cheese crumbles, anything you like!
Light and crunchy good!

I love slaw and I’m always looking for healthier and low fat. This would be a great side and a good way to add a little crunch………..
Thanks Emily!
What a colorful and healthy dish!
I’m making this one! Sooner rather than later, though it would be a great summer salad, too!
Sure, any time!
Great idea! I love the goodies you added.
thanks Mimi, I love goodies in salad!
I like the sound of the lighter dressing, Jenna. I need some crunch added to this January diet. Enjoy the sunshine and Happy Tuesday!
Yummmmy 🙂
Sounds like a hearty salad:@)
This sounds so good! 😍 I like that you lightened it up with the nonfat Greek yogert! 💕
The boys don’t like mayonnaise but love yogurt so it is a great way to dress coleslaw and get extra protein
Great minds *make* alike Jenna! I made a similar version inspired by a salad at the grocery store deli. Happy Weekend to you!
