Party Panache, Lemon Berry Cheesecake Parfaits and Giveaway Winners!

We have been blessed with the most beautiful week of sunshine and low humidity in the South and I have been really enjoying a lot of patio time

Superboy’s 11th birthday was Tuesday {how did he get so old???}

He and his brother Big E have birthdays 4 days apart

They both had already had birthday parties with ice cream cakes

I wanted to serve a special dessert

that was different than cake and ice cream

and thought this cool and creamy cheesecake parfait might be a hit

Crumble 2 cookies in the bottom of each glass or jar

Just smoosh them quickly with your fingers

The moisture from the cheesecake will soften them

Mix the cream cheese, lemon curd, sugar, lemon juice and vanilla together

When it is well combined

Fold in the Cool Whip

Lick your fingers and the spoons…

all good chefs taste their food you know

Divide mixture evenly between glasses and push it down

Smooth out the tops and clean glass rims with a damp paper towel

Top with berries, crumbled cookies or lemon zest

In no time at all you’ll be back outside!

This is a great recipe for all the upcoming summer events

Make them ahead of time and serving is a breeze!

You could even make these in sturdy paper cups for easy clean up…

and with red and blue berries

you’re all set for Memorial Day and 4th of July!

Lemon Berry Cheesecake Parfaits

Light and refreshing summer dessert in a jar!
Course berry cheesecake, cheesecake parfaits, Dessert, dessert in a jar, easy cheesecake dessert, lemon curd, summer dessert
Cuisine American
Servings 8

Equipment

  • 8 jars or small glasses

Ingredients
  

  • 1 cup lemon curd
  • 1 cup powdered sugar
  • 8 oz. cream cheese softened
  • 1 tsp vanilla extract
  • 1 T fresh lemon juice
  • 1 8 oz tub Cool Whip thawed and divided
  • 16 lemon Oreo cookies
  • strawberries and blueberries for garnish

Instructions
 

  • Crumble 2 cookies in the bottom of each jar or glass.
  • Combine cream cheese with lemon curd, sugar, lemon juice and vanilla. Mix with mixer until well combined.
  • Fold in 3/4 of Cool Whip.
  • Divide mixture evenly between glasses. Smooth down with the back of a spoon. Clean rims of glasses with a damp paper towel. Garnish with berries.
  • Refrigerate for at least 1 hour if possible. Top with a dollop of reserved Cool Whip when serving if desired. Will keep, covered in the refrigerator for several days.
