Party Panache, Rainbow Cupcakes

Our little leprechaun, CC, celebrated her St. Pat’s birthday early this year
“Mom, would you please handle getting cupcakes for her party?”
“Her theme is rainbow, and we’ll need probably 36…”
“No problem” I replied…
Well that was about 2 weeks ago,
and I got busy checking local bakeries for selections and prices
I quickly discovered that full size bakery cupcakes can cost $4+ a piece
A quick math calculation sent me to Pinterest to look for recipes/ideas
These rainbow batter cupcakes from Dessert Now Dinner Later looked perfect
I could make them for a fraction of the price
and they were cuter than anything I could find in the local bakeries
Then life happened…
Last Monday I woke up to a text from HHjr,
“Big E is asleep upstairs, he has the stomach virus and was up all night,
I’ll be back as soon as I drop Super Boy at school”
Uh oh…
Multi-generational living has occasional down sides 🙃
Luckily for me, Big E went to his mom’s to recuperate…
I had planned to go shopping for cupcake decorations, but it was raining buckets
and I wasn’t feeling that great myself
So, Amazon to the rescue!
If I didn’t feel like making the rainbow batters,
I could make just plain or confetti cupcakes and dress them up with these extras
The next day when I woke up,
I realized that the runny nose that I thought was allergies
wasn’t allergies, but a full blown cold 🤧
By the end of the week, I realized I didn’t have the energy to bake
nor did I want to risk spreading germs so I ended up ordering cupcakes
I discovered I could order just plain yellow cupcakes for $2 each
They would come boxed with fluffy icing and sprinkles
All I had to do was add the rings and wrappers
The rainbow wrappers have slits to adjust to 3 sizes,
so I was able to make them fit perfectly
For a finishing touch, a rainbow ring topper
that also serves as a party favor
By this time, Big E was all better,
{he was sick for 24 hours, me, over a week, agh!}
After much hand washing,
he was in charge of putting the rings on top and the cakes in the wrappers
Party Ready! 🎈 🥳 🎈
So I guess the point of all this is
If you look hard enough, you will find a rainbow…
There’s always a rainbow after a storm…
Oh I know!!
