Party Panache, Peppermint Snow Topped Chocolate Cake

I celebrated my birthday Friday evening by the patio fireplace,

with my family and a couple of very dear friends

who also have December birthdays,

we were safely distanced …

HHjr cooked some incredible pizzas in the pizza oven,

Sausage and Mushroom with Parmesan balsamic glaze,

Pear, Spinach and Gorgonzola,

and a Hawaiian pizza with ham and pineapple

I made a special cake for the occasion,

a decadent chocolate chip bundt cake topped with “peppermint snow”

There were significant ohs and ahs,

and suggestions to share this easy recipe…

It is based on a doctored up chocolate cake mix

White and milk chocolate chips are added to the batter before baking

Let cake cool in pan for 30-45 minutes and then turn out onto a plate

The icing is a basic cream cheese buttercream,

with a dash of peppermint extract

And my favorite holiday sweet, Peppermint Bark

Chocolate Cake Topped with Peppermint Snow

Equipment

  • Bundt pan

Ingredients
  

  • 1 box chocolate cake mix
  • 4 large eggs at room temperature
  • 8 Tbsp unsalted butter, melted
  • 1/2 cup buttermilk
  • 1 box chocolate pudding
  • 1 cup white chocolate chips
  • 1 cup milk chocolate chips

Peppermint Snow Icing

  • 8 oz. whipped cream cheese, softened
  • 1 1/2 cup powdered sugar
  • 4 Tbsp unsalted butter, softened
  • 1 tsp peppermint extract*
  • 8 squares peppermint bark, about 3/4 cup, chopped

Instructions
 

  • Combine cake mix, eggs, pudding mix, butter, buttermilk in a stand mixer or mixing bowl and beat for 2 minutes on medium. Batter will be thick.
  • Gently stir in chocolate chips
  • Spray bundt pan with Baker's Joy or cooking oil spray and spoon batter in, making an even layer
  • Bake in a preheated oven according to cake mix box directions until a tester comes out clean, 35-45 minutes, depending on oven and other variables. Check often near the end of cooking time, and do not overbake. {I baked mine for 40 minutes}
  • Let cake cool for 30-45 minutes, then turn out onto a plate

Peppermint Snow Icing

  • Combine butter and cream cheese, mixing well to blend
  • Add peppermint extract {use 1/2 tsp for a less peppermint taste or substitute vanilla if preferred}
  • Add powdered sugar, 1/2 cup at a time, and mix.
  • Spread frosting in a thick layer over the top of cooled cake and part way down the sides. Sprinkle with chopped peppermint bark or peppermint candies

Notes

This is a very dense cake, you can add 1 cup of sour cream to lighten it up if desired.
*Reduce peppermint extract amount if desired or substitute vanilla for a less minty flavor

    HHJr. needs to give Trip lessons on how to make pizza. We don’t have a pizza oven, but we do have a Big Green Egg, and we have failed each time we’ve tried to make them! Your looks delish! I’m not even going to comment on that cake. Goodness! I hope your birthday was fantastic, Jenna! 😀

    • Thanks RJ, we had such fun! The secret to good pizza cooked outside is the heat, he starts the pizza oven fire at least 2-3 hours before cooking the pizzas and the heat is at least 500 degrees…so your problem could be using the Green Egg, those grills are better for low and slow and pizzas need hot and fast!

    Oh, Jenna, I now know why I love you, your blog and talents so dearly–you are a fellow Sagittarian!!! My birthday is the 12th of Dec. I had a small dinner with my daughter, granddaughter, and the other grandmother–we took the lazy woman’s route and ordered Chinese–seemed we ordered one of every dish, but a good time was had by all.
    Through the years I have had many friends, but about 8 or more are December babies, we always just seem to hit it off.
    Hope your next year is a happy one, free of storms and viruses and lions and tigers and bears.

    I’m so glad you were able to have your family and some friends over. Having it outside was perfect. I need to do that if I could plan ahead with the weather. I miss my friends.
