Party Panache, Peppermint Snow Topped Chocolate Cake
Posted by the Painted Apron on December 13, 2020 · 46 Comments

I celebrated my birthday Friday evening by the patio fireplace,
with my family and a couple of very dear friends
who also have December birthdays,
we were safely distanced …
HHjr cooked some incredible pizzas in the pizza oven,
Sausage and Mushroom with Parmesan balsamic glaze,
Pear, Spinach and Gorgonzola,
and a Hawaiian pizza with ham and pineapple

I made a special cake for the occasion,
a decadent chocolate chip bundt cake topped with “peppermint snow”

There were significant ohs and ahs,
and suggestions to share this easy recipe…
It is based on a doctored up chocolate cake mix

White and milk chocolate chips are added to the batter before baking

Let cake cool in pan for 30-45 minutes and then turn out onto a plate

The icing is a basic cream cheese buttercream,
with a dash of peppermint extract

And my favorite holiday sweet, Peppermint Bark

Chocolate Cake Topped with Peppermint Snow
Equipment
- Bundt pan
Ingredients
- 1 box chocolate cake mix
- 4 large eggs at room temperature
- 8 Tbsp unsalted butter, melted
- 1/2 cup buttermilk
- 1 box chocolate pudding
- 1 cup white chocolate chips
- 1 cup milk chocolate chips
Peppermint Snow Icing
- 8 oz. whipped cream cheese, softened
- 1 1/2 cup powdered sugar
- 4 Tbsp unsalted butter, softened
- 1 tsp peppermint extract*
- 8 squares peppermint bark, about 3/4 cup, chopped
Instructions
- Combine cake mix, eggs, pudding mix, butter, buttermilk in a stand mixer or mixing bowl and beat for 2 minutes on medium. Batter will be thick.
- Gently stir in chocolate chips
- Spray bundt pan with Baker's Joy or cooking oil spray and spoon batter in, making an even layer
- Bake in a preheated oven according to cake mix box directions until a tester comes out clean, 35-45 minutes, depending on oven and other variables. Check often near the end of cooking time, and do not overbake. {I baked mine for 40 minutes}
- Let cake cool for 30-45 minutes, then turn out onto a plate
Peppermint Snow Icing
- Combine butter and cream cheese, mixing well to blend
- Add peppermint extract {use 1/2 tsp for a less peppermint taste or substitute vanilla if preferred}
- Add powdered sugar, 1/2 cup at a time, and mix.
- Spread frosting in a thick layer over the top of cooled cake and part way down the sides. Sprinkle with chopped peppermint bark or peppermint candies

What a fun celebration! Okay, ANY celebration is fun in this year, but I’m happy to see you could actually have a real, live celebration. The cake looks and sound delicious. I love peppermint!
Especially with chocolate!
Yep!
Thank you Rita, it was so much fun and I am so thankful we could have a gathering, that was the best present ever!
Sounds like you had a nice b-day Jenna-congrats! The cake would be a very nice treat… Even for breakfast:@)
Thanks Lynn, the cake is dangerous!
Happy Birthday, Jenna! It sounds like you had a most special one! Pizza is my favorite food, and what could be a more perfect birthday dinner. I always love seeing your beautiful outdoor area. That cake is a show stopper! It is not only pretty but sounds most scrumptious! I hope you have a most beautiful week ahead!
thanks so much Shannon, I had such a wonderful day!!
I think I just gained three pounds reading that recipe! Yum, looks so good!
Ha, it is a decadent cake, thanks Carole!
Oh Jenna, I’m sure the neighbors were wanting to come visit you while HHjr was putting the pizzas in the oven. Love the holiday decorated fireplace, so festive. The cake looks delish and perfect for the season. Happy Sunday…….
Thank you Emily, we love pizza oven days!! Today ooks like a good day to stay cozy, brrrrr…
Jenna, what a fabulous birthday celebration. The wood fired pizzas look amazing as does your cake. I love peppermint bark. Have a lovely Sunday before the rain comes again!
Thanks Pam, I did enjoy the weather Sunday, great day to be outdoors and today I am so happy I don’t have to venture out!!
Belated Happy Birthday Jenna! Everything looks so delicious and sounds like you had a perfect celebration!
Thank you Martha, I really did!
A belated happy birthday to you Jenna, it sounds like it was a decadently delicious one. 😘
What fun!
Happy Birthday, you clever lady!
Thank you Leslie Anne!
HHJr. needs to give Trip lessons on how to make pizza. We don’t have a pizza oven, but we do have a Big Green Egg, and we have failed each time we’ve tried to make them! Your looks delish! I’m not even going to comment on that cake. Goodness! I hope your birthday was fantastic, Jenna! 😀
xo,
RJ
Thanks RJ, we had such fun! The secret to good pizza cooked outside is the heat, he starts the pizza oven fire at least 2-3 hours before cooking the pizzas and the heat is at least 500 degrees…so your problem could be using the Green Egg, those grills are better for low and slow and pizzas need hot and fast!
Oh, Jenna, I now know why I love you, your blog and talents so dearly–you are a fellow Sagittarian!!! My birthday is the 12th of Dec. I had a small dinner with my daughter, granddaughter, and the other grandmother–we took the lazy woman’s route and ordered Chinese–seemed we ordered one of every dish, but a good time was had by all.
Through the years I have had many friends, but about 8 or more are December babies, we always just seem to hit it off.
Hope your next year is a happy one, free of storms and viruses and lions and tigers and bears.
Happy, Happy belated birthday dear Jenna!
Oh goodness Sheila, we are practically birthday twins!! Your celebration sounds perfect, small gatherings with those that are very important to you are the best! I love your birithday wish of no more lions and tigers and bears, Amen!! [yes Sagittarians are special :)] Have a wonderful after birthday week!!
A belated happy birthday, sweet Jenna. I like that you celebrated as that is just one way to make life seem more normal. If you are going to have cake, it definitely should be one you like.
Thank you Linda, having a gathering was a present in itself!
Happy Birthday, Jenna! Sorry I’m a bit late. Your cake is decadent! I beat there is none left. Looks delicious. So does the pizza!
I’m so glad you were able to have your family and some friends over. Having it outside was perfect. I need to do that if I could plan ahead with the weather. I miss my friends.
Thanks so much Bonnie, it was a perfect little celebration, and luckily the weather did cooperate…I hope you can see your friends safely soon!
I’m not all that big on chocolate cake — the but peppermint snow might land somewhere else! Yum! (And as chocolate cakes go, this one looks pretty good1)
Happiest of birthdays, Jenna! Belated or not!
Thanks Jeanie!!
Happy belated birthday Jenna. I hope that you are truly feeling blessed these day. Girl, I have been thinking about pizza and actually I am drinking coffee and still would love a slice. But…that wonderful cake would go quite well with my coffee this morning. YUM! Hugs and blessings, Cindy
Aw, thank you Cindy!
Happy belated birthday Jenna. It sound like a wonderful birthday celebration with family, friends, and good food. The pizza and cake look and sounds so good. Thanks for the cake recipe. Have a nice week Jenna.
Thanks so much Julie!
Good gravy, Marie! This looks magnificent! I don’t find much joy in baking, but I may just have to make this. I had planned on baking some cookies over the weekend, but only got as far as softening the butter and dragging the mixer up onto the counter.
I don’t bake much either Pattie, but I do love to make bundt cakes, they are so easy!
Oh Yummm Jenna! This looks fabulous. (The pizzas do too, but chocolate cake is always #1, right?!) 🙂 Thanks so much for sharing the recipe, and Happy Late Birthday!
Thanks so much Barbara!
And now you’ve provided dessert and a delicious peppermint one, too!! 🎄❤️🎄
haha, I was dying to make that cake, so just decided to make it for my own birthday!
My birthday is between Christmas and New Years. I think this is my birthday cake this year. In my next home, I plan on a pizza oven in an outdoor fireplace.
Happy Birthday!! It is hard to beat pizzas cooked in an outdoor oven! Merry holidays…
Happy Belated Birthday Jenna! Dinner outdoors by the fireplace with friends and with a pizza buffet sounds like a wonderful way to celebrate! Your cake looks decadent and delicious! ♥
Thank you Mary, it was a perfect birthday 🙂
That pizza sounds amazing and your cake looks so scrumptious! Happy belated birthday!! Pinned.
Thank you Joanne!
