Party Panache, “Snownut” Cake

We celebrated my son in law, NG’s, birthday last weekend

CC and I made him a lemon cake

covered with white buttercream and white chocolate chips…

It looked just like a giant powdered donut!

It’s made with lemon cake mix,

lemon jello, lemon juice, eggs, butter,

white chocolate chips, and sour cream {not pictured}

CC got her very own baking things for Christmas

and she was very excited to put on her new apron

and help make her Daddy’s cake

White chocolate chips were stirred into the prepared batter

and some were reserved for garnishing

Once the cake had cooled,

we covered the cake with a simple lemon buttercream,

and pressed white chocolate chips all over the frosted cake

A winter wonderland cake!

I couldn’t resist take pictures of it outside

with the sugar white sands of Orange Beach in the background

Snownut Cake

Lemony Bundt Cake with White Chocolate Chip Buttercream
Prep Time 10 minutes
Cook Time 30 minutes

Equipment

  • Bundt pan

Ingredients
  

Cake

  • 1 box lemon cake mix
  • 1 box 3.4 oz. lemon instant pudding
  • 1 cup sour cream
  • 8 Tbsp unsalted butter
  • 4 large eggs
  • 1/4 cup fresh lemon juice
  • 1/4 cup water
  • 3/4 cup white chocolate chips
  • 1/2 cup granulated white sugar

White Chocolate Buttercream

  • 8 Tbsp unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup lemon juice or milk*
  • 3/4 cup white chocolate chips

Instructions
 

  • Combine cake mix with all the other ingredients, except the granulated sugar and white chocolate chips, in a mixing bowl. Beat until combined, 1-2 minutes.
  • Stir in chocolate chips
  • Spray bundt pan generously with cooking or baking spray. Put sugar into pan and shake and turn pan until it is coated everywhere with a thin layer of sugar.
  • Add batter to pan and bake according to cake mix directions, checking near the end of baking time. Do not over bake.
  • Set cake on rack to cool for 1 hour. Gently invert cake onto a plate or cake stand and continue cooling before icing.

White Chocolate Chip Buttercream

  • Combine softened butter with powdered sugar and beat until smooth. Add lemon juice or milk, a little at a time, until icing reaches desired consistency.
  • Ice cake with buttercream and then add whited chocolate chips all over the cake, pushing chips into icing to secure.
  • Store cake covered at room temperature or in the refrigerator

Notes

*add liquid, a little at a time, to icing until desired consistency is reached
Use 1 12 oz. package of white chocolate chips, half in the cake batter, and half for the icing

    CC is adorable – I love her dimple! I need to make this cake for ME! I have a few questions, Jenna: 1) what size box pudding? 2) is the 1/2 c sugar only for lining the bundt, not to be included in the cake mixing? 3) do you use a stick of butter in each of the cake mix and the icing? I only saw one pictured. I think sour cream makes a huge difference in any recipe. It pretty much guarantees moistness if you don’t overbake.

    • Just the regular size pudding, 3.4 oz. and the 1/2 cup sugar is just for the pan and you can skip that part if you want. {Coating the pan with sugar gives the cake a slight crunchy texture}. Yes, you use a stick of melted butter in the cake batter, and a softened stick of butter in the icing. Sorry I didn’t get everything pictured, it was hectic while we were baking 😂 I did edit the recipe with these changes, so it should be clearer now if you want to print it out. Thanks for the questions, Rita, I appreciate the chance to make the changes!
