Throwback Thursday, Creamsicle Mimosas

I have Mimosas on my mind this week,
as we are enjoying the last of the Mimosa Muffins
from CC’s Tea Party
I’m also dreaming of beach time
and having a cool cocktail by the pool
How about a mimosa?
A Creamsicle Mimosa?
Champagne of course…
And orange sherbet!
Put a scoop of sherbet orange sherbet in a glass
I used margarita glasses
putting the scoop of sherbet in the center
and pouring the champagne over it
When you add the champagne
it gets all foamy, creamy, dreamy
Let the sherbet melt into the bubbly
sit back and relax, enjoy the view…

Yep, that pretty green color is the result of a broken pool pump
The pool service people said they ordered one
but because of the pandemic, getting parts is slow…
I was planning to go there for a couple of weeks,
with family joining me most of that time around Memorial Day
but with the pool closed,
the pier still not rebuilt
and now the pipeline crisis and gas shortage…
we might not be able to go at all
I hope to soon be drinking champagne to celebrate
rather than drowning my sorrows!

CREAMSICLE MIMOSA
Ingredients
- 1 scoop of orange sherbet per serving
- Champagne Proseco or sparkling wine
Instructions
- Place sherbet scoop in a wide rimmed glass such as a martini or margarita glass. Pour champagne slowly over sherbet. Stir to melt sherbet into the liquid. Enjoy!

Ok, green colour isn’t good, but you have a really nice home…I thought it was a hotel or resort. The creamsicle mimosa looks so refreshing!
Thank you Angie, I really shouldn’t complain, it’s just hard to see the place my family loves so much in disrepair…but we’re working on it!
We have family that had to cancel their vacation to the coast because of the gas shortage, not a happy time for sure. Everything is moving so slow with the pandemic so it’s not surprising your pool pump is slow to come it and the same with the pier after the hurricane, backed up. The creamsicle looks delicious, hope you will be enjoying those at the beach house very soon. Save one for me 🙂

Aww, man!🥺 But if you’ve gotta drown your sorrows, the dreamsicle mimosa is the way to go! I’ve made those, and on a hot day…woo hoo!!!!!!!!!!🍾🍊 Hope things get back to something more normal soon and you can get back to enjoying the fruits of your labor…and not just those fruits in the sherbet!!!🤣🤣🤣

Bummer for sure! Your beach home is like an awesome resot! 😁 Well, we will hope and believe it will get fixed eventually and in the meantime, enjoy your beautiful city house and your painting, your fun tablescaping, those great recipes, your precious grandkids and that yummy sounding drink! Hehe I hear my mom say, “this too shall pass…”, 😉 and that’s what I keep telling myself now hubby is home from his 19 day hospital stay and we are working on getting him stronger. Well, that’s bad news. Possibly not surprising — everything seems backed up these days — but still, no fun. And the pump is just another piece to add. Oh, I do hope you can celebrate soon but even if drowning your sorrows, I can’t think of a better way to drown!

I know, everyday it seems like there is something else to worry about in this world, I can barely watch the news anymore! I did meet a friend for lunch at a restaurant yesterday, my first time in a restaurant in 15 months!
Champagne and sherbet? That’s it? I am not a drinker of wine or champagne, but I do find myself with a bottle of champagne not knowing what to do with it. You have solved my problem. This looks amazingly delicious.

A delicious way to drown your sorrows Jenna! The are so many shortages right now. My BFF renovated her kitchen 9 months ago and is still waiting on a couple of appliances and hubby has been waiting on parts for his truck for months. Fingers crossed the gas shortage is resolved soon for all of us. ♥
Ugh! We did luck out and the pool was fixed yesterday, we are so excited, because we will have it for our vacay next week, and gas shortages aren’t too bad in AL…I hope you can get your boat fixed without a long wait…

Good news Kitty, right after I posted my “pity party” about the pool, they came and fixed it! So now it’s back to sparkling blue and ready to enjoy. My daughter and her family is going to be there for 10 days with me, and my son and his boys will be there on the weekends, so yay, we can still enjoy our vacation!
